昨年OMAKASEで予約を取って以来、来店時に次の予約を取ることで季節の素材が変わるタイミングで定期訪問させてもらっている。食べログBronzeを受賞するほどの言わずと知れた超がつく高級店であるが、店主の三科氏が素材の味を活かしつつ、綿密に計算された調理技術をカウンター越しに惜しげもなく披露し、超絶と言える料理を楽しむことができる。この季節はふぐの最盛期ということで楽しみにしてきた。出された料理は以下の通り。
もち米のおじや風カラスミ乗せ
ふぐの身、皮、白子の刺身
ふぐ唐揚げ
白子と椎茸の焼きあんかけ添え
てっちり
身皮(身に近い皮の部分)の照り焼き
ふぐのスープカブ入り
京都牛と白米(新潟県産コシヒカリ)

それぞれの料理は素材も調理法も超一流で非のつけようが無い絶品である。
話好きの三科氏の接客と料理の解説や業界の裏話等も心地良く、料理もさることながら、居心地よく食事を楽しめる。
次は4月に筍を食べに訪問予定。非日常を楽しめる特別なお店である。
