寿司の都 北九州を推しているなか、ここは必ずお寿司にひと手間加えてます^_^ほぼネタを寝かせて熟成させます。最近増えてきた江戸前鮨なのですが、赤酢にも拘っていて、ここのお店が凄いのが大将が以前は機械のリースメーカーで働いていて、何も修行をしてなくて開店させたというところ。趣味の釣りと料理、食べ歩きして、独学で寿司を握っています。津本式神経締めにて提供していて、独学で覚えたとは思えないw(°o°)wその証拠にお客さんも増えて頑張っています。日本酒も珍しいお酒を選んで仕入れていて、とっても美味しかったです^_^やっと3周年…ということで伺いましたよー頑張ってほしいお店です(。•̀ᴗ-)✧
