南青山の、所謂“閑静な住宅地”で、人通りも少なく、
とても静かで落ち着いた場所です。
お店の前には、開店の随分前からドアを開けて
お出迎えされていて、予約より早い時間でしたが
入店出来ました。
以前、ランチを戴いた時に、スペシャリテでもある
“バーニャカウダ”はディナーコースのみだと
お聞きしていたので、今回はディナーで伺いました。
◆CENA 「盛夏」 (サ•税込 24,200円)

●パネカラサウ フムス 落花生
薄いパンを、フムスという柔らかく煮たひよこ豆と
バター、ピーナッツを加えたものに付けて。
●鮎 梅肉
鮎を8時間掛けて火を通し、梅をコンポートにして
サンドしています。
●ズワイ蟹 アボカド 赤パプリカ
オレンジ色の赤パプリカ使用。サクサク生地の中に
ズワイ蟹、アボカドのタルタル、赤パプリカのジュレと
ピューレを添えて。
●苦瓜 フォアグラ 80%カカオ
フォアグラのテリーヌ、フランス産80%カカオ
ゴーヤのスライスをトッピング。
●クレマフリッタ 発酵唐辛子 自家製生ハム
ほんのり甘くて、チーズの香りのカスタードクリームを
コロッケにしたもの。生ハムのスライスを添えて。
●茄子 甘酒 キャビア コンソメ
白茄子と甘酒、コンソメゼリー、キャビアとハーブの
食べるスープ。
●玉蜀黍 酒粕 雲丹
玉蜀黍に仕上げのソースを掛けます。

豚肉に炭を塗して焼き上げています。
◆桃 ブッラータチーズ ロメインレタス
桃、フルーツトマトをマリネし、ロメインレタスと
ムース状のブッラータチーズを添えています。

で仕上げ、最後にハーブのオイルを掛けます。

イカ墨を練り込んだキタッラというパスタ。
ソースは、ペペロンチーノにアンチョビ、いしるで
旨みを。白イカ,トマト、オクラ,カラスミ、ライム
の皮を添えて。

3種の野菜サルサ
(追加で黒トリュフ サ•税込 +4,400円)
●本日の肉料理 牛イチボ
塩麹で熟成させ、ローストして薄くスライスした
カリアータという料理。フォンドヴォーにわさびを
添えたソース。万願寺唐辛子とカボチャをお肉の下に。
●お口直しのデザート
パッションフルーツのグラニテ。
半分にしたパッションフルーツをくり抜き、器にして
発酵クリームとパッションフルーツの種、果肉を入れ
上にはミントのグラニータでさっぱり味に。
