ミシュラン一つ星
新潟駅にある寿司屋、すし あらいに行ってきました。こちらは完全予約制のお店で予約は1人から受け付けております。若干予約が取りにくい感もありますが特定のこの日じゃないとダメ!ってことでもなければ1週間前辺りに予約すれば枠は抑えられそうな印象です。
カウンター五席で気持ちカウンターと大将との距離が近いように感じました。寿司職人の技術を間近で見られるのはとても贅沢ですね。
更に今回はカウンターのど真ん中という特等席で頂くことが出来ました。
コースの中でちょくちょく私が素材について質問したのですが、大将からのご説明でただいいものを揃えるだけでなく何に合わせるかによってどれを使うかを決めている、客の入り時間に合わせて温度管理、熟成期間を逆算して管理していると聞きその職人業に圧倒されました。
ホリエモンが度々寿司職人なんか専門学校通ってすぐ成れる。何十年も修行するやつはバカと言っていますがこのような事は一朝一夕で出来ないでしょう。
寿司”職人”というものについて考えさせくれる素晴らしいお店だと思いました。
