本日は結婚28周年の記念日と言う事で、友人夫婦の御好意で
【寿司処 暁月-akatsuki-】さんに訪問。
こちらのお店は、今年の4月にオープンされたお店。
ミシュラン店で修行された大将の卓越した技術のお料理が存分に味わえるお店です。
まずはサッポロクラッシックで乾杯。
ビールグラスは有田焼の磁気焼
薄く焼かれているので、口当たりが良きぃ〜
夜の予約は【大将おまかせコース】のみとの事。
季節の一品や熟成ネタのお寿司が存分に楽しめます。

北海道稚内産 水蛸の柔らか煮
水蛸の柔らかさと、すりたてのわさびの風味が
楽しめる一品。
◆おすい物
根室 真だちのおすい物
出汁の味が柔らかく、身体中に染み渡ります。
◆煮物
道東、釧路産仙鳳趾 牡蠣のうしお煮
出汁と牡蠣本来の、味のバランスが最高〜
◆握り
噴火湾産 ひらめ
プリプリの食感が絶品。
島牧産 真鯛
これまた食感がたまらなぁ〜い
釧路産 マグロの赤み
熟成25日、この味わいはなかなか味わえない。
高知産 しまあじ
この時期しか味わえない脂のノリを堪能しました。
静岡産 桜海老
一昨日、解禁したばかりで、本日朝のセリで入荷。
今まで食べた事が記憶に無く感動のお味でした。

一番だしと赤酢のお味。
もずくが噛むたびシャキシャキの食感が楽しめます。

余市産 あん肝の甘辛煮
濃いめの味付けのあん肝とお口直しのみようがをのバランスが良きぃ〜

皮面の炙り具合と身のバランスが絶妙〜

25日間熟成された中トロをお塩でいただきました。
程よい脂と食感がまた最高〜

雲丹のコクがたまらなぁ〜い( ^∀^)

新潟産 おけさがき
日本酒のゼリーがアクセント!
呑み物はビール以外に大将のおすめで
高知産 『酔鯨』を冷酒でいただきました。
北海道産のお米でできたお酒でとても呑みやすく、
お料理にぴったりのお酒でした。
何もかもが最高〜❗️
大将の人柄はもっと最高〜‼️

嫁と二人で至福のひとときを感じ最高な結婚記念日となりました。
