歌舞伎町に現れた“本物”の天ぷらと蟹の名店
天冨良 新宿 天蟹楼
新宿・歌舞伎町の喧騒を一歩抜けた先に、
高級感のある上質な空間が広がる「天冨良 新宿 天蟹楼」。
こちらは、麻布十番のミシュラン掲載店で腕を磨いた大将が独立して開いたお店。
地下にひっそり佇むその店構えからは想像できないほど、
店内は洗練され落ち着いた雰囲気。
今回は「蟹と天麩羅会席 特上(15品)12,980円」をいただきました。
座付きの「雲丹とズワイ蟹 蟹味噌あえ」から早速感動。
素材と職人技が光る天ぷらは、
水槽から揚げられたばかりの「車海老」、
ふっくらジューシーな「金目鯛」、
夏野菜の「万願寺とうがらし」に、大分県産の「椎茸」、
プリプリの車海老はもちろん、暑くなり始めた今だから
ぐっと成長した「万願寺とうがらし」の野菜の味の濃さも。
椎茸の肉厚と食感もとても良い感じ。
この季節の金目鯛は、美味しいよね。
後半の天ぷらでは、
「ズワイ蟹」「茨城県産 蓮根」 「岩手県産 ホタテ」 「紅はるか」とつづき、どれも納得のおいしさ。
衣が薄く、サクサクで
どの素材も絶妙な揚げ加減。
中でも印象的だったのは「天巻き」。
ズワイ蟹、いくら、キャビアを贅沢に巻いた逸品で、
パリッとした海苔と一体になり、贅沢の極み。
蟹料理はタラバの焼物、餡かけ茶碗蒸し、
蟹のお茶漬けまで、まさに“蟹尽くし”の一夜。
旬を見極めた調理法で、素材の魅力を引き出す技術が随所に感じられました。
接客も素晴らしく、大将の丁寧で柔らかな人柄が料理の美味しさをさらに引き立てます。
天ぷら好き、蟹好き、そして“本物の和食”を味わいたい方に、心からおすすめしたい一軒です。
