落ち着いた店内は、ネタの艶やかさや大将の手元が自然と目に入るちょうどいい明るさ。
凛とした空気と職人の気配が漂う静謐な空間です。

赤酢と塩が効いた硬めのシャリ。
このシャリの温度変化に合わせて、ネタを決めていくそう。
握りの1貫目をいただいたときにシャリがかなり温かいな、と感じました。
その分トロの脂が口いっぱいに広がって、最初から最高のスタート。
鮃の握りには塩と酢で軽く〆てさっぱりした味に調えたり、
車エビの握りには帆立の朧で甘みを加えていたり、
甘い出汁巻き卵にほどよい塩味の出汁をかけたりと、
一品一品に丁寧な工夫が凝らされていて、細部まで心配りが伝わってきました。
特に印象に残ったのは、ノドグロと穴子。
ノドグロは海苔で巻いた姿で登場。
海苔の香りに負けない甘みと厚みのあるネタがしっかり主張してきます。
穴子はふわふわしっとりの食感に笹の香りをほんのりまとっています。
甘みと醤油感の強いツメが最高でした。

日本酒が多くラインナップされている印象。
江戸開城と天狗舞をいただきました。
江戸開城は東京23区で造られていて、水道水を仕込み水に使っているというユニークな日本酒。
フルーティでフレッシュな口当たりが握りとよく合います。
天狗舞はほんのり黄味がかった色味で、米の旨味をしっかり感じます。
でも重たくなくて、後半の濃いめのネタにもぴったりでした。
カウンター越しに交わされる会話も心地よくて、大将の所作はとてもスマート。
シャリの温度や魚の状態を見ながら、コースの流れをさらっと組み立てていく姿が印象的でした。
コース全体を通して、温度・味・食感の緩急を感じられて、心満たされるひとときでした。
