雰囲気:
恵比寿のメインストリートから少し離れた静かな通り沿い。
ビルの3階にひっそりと佇む寿司店。
高い天井に控えめな装飾、白木のカウンターが印象的な落ち着いた雰囲気です。
店内は過度な演出がなく、職人の所作やネタの艶が自然と目に入るちょうどいい明るさ。
凛とした空気の中にもどこか柔らかな気配が漂っていて、
ほどよい緊張感の中で、お寿司とじっくり向き合える空間です。

さっぱりねっとりのスミイカから始まり、脂ののった赤身や香り豊かな昆布締め、
ふわふわの焼き物、濃厚な小丼までテンポよく展開。
甘みや塩味、食感の変化が楽しくて、最後は干瓢巻や温かい椀物、
上品な甘さの甘味でほっと一息できる構成でした。
特に印象に残ったのは、甘エビと石鰈の昆布締め。
甘エビは贅沢に3尾のった一貫で、ねっとり濃厚な甘みが舌にまとわりつくようで、
余韻までしっかり残ります。
石鰈の昆布締めは、むちむちとした食感のあとに塩味のパンチが効いていて、
淡白な旨味の中にしっかりとした輪郭を感じる味わい。
後からじんわりと追いかけてくる昆布の余韻が、静かなインパクトを残してくれました。

日本酒は江戸切子のお猪口を選べる演出が粋。
春鹿 超辛口と、十九の“むかしむかし”・“あるところに”をいただきました。
春鹿はキレがあり、淡白なネタにぴったり。
“むかしむかし”と“あるところに”は、物語のような名前に惹かれてオーダー。
それぞれ個性的な味わいで、後半の濃いめのネタによく合いました。
