この店の大将は 川下 大輔 氏で、複数の名店での修業を経て、以前は同ブランドの心斎橋店でも腕を振るっていました。
鮨shizuku 西天満では「ここでしか食べられない一品、鮨」をコンセプトとし、全国各地から厳選した旬の素材を仕入れています。

シャリには赤酢と米酢を使い分け、ネタごとに最適なシャリ・酢のバランスを追求されており、例えば「赤酢100%の赤いシャリ」「米酢100%の白いシャリ」など三種使い分けるケースもあります。 
また、握りの間に挟まれる調味料(鯛塩、雲丹塩、鰹塩など)をそれぞれのネタに合わせて使い分けることで、ひと口ごとに味の変化を感じられる構成となっています。
〜感想を少し〜
大将の所作は柔らかく、しかし一貫一貫に揺るぎない自信と確かな経験が感じられます。
握りの間に挟まれる小皿や塩のアレンジも多彩で、塩の粒立ちや香りが味を重ねていくように広がり、ここでしか味わえない唯一無二の足し算のお寿司をいただきました。
