シェフは 林 大 氏は1997年生まれ京都出身の埼玉育ち。
料理学校を卒業後、実家近くのフランス料理店で約3年修業し、続いて東京の マルゴット・エ・バッチャーレ で3年間研鑽を重ねました。 
その後、オーナーである 林 亮治 氏からの声掛けを受け、2023年10月1日に白寧をオープン。 
店名「白寧」の由来は、「白=純粋な気持ちで」「寧=丁寧/家のように安心して過ごせる空間」を意味しており、林シェフ自身の信念を象徴しています。 
開店から1年足らずで、ミシュランガイド東京にて一つ星を獲得。
〜感想を少し〜
フランス料理で培った技術をベースにしながら、国内各地から厳選された旬食材を日本的・現代的な視点で仕立てられていてとても美味しかったです。
空間も素敵でまだまだ若いシェフの方なので今後が楽しみです。
