この店の良さは、単に肉が美味しいだけでは終わらないところ。焼き方や食べ方まで含めて「一番美味しい瞬間」を体験させてくれる点にある。今回もその真価を、厚切りタンから〆の冷麺まで、しっかり堪能した。
まずは厚切りタン。見た目からしてテンションが上がる厚みで、網に乗せるとじわっと脂が滲む。表面をしっかり焼き、中は火を入れすぎないのが正解。噛んだ瞬間のサクッとした歯切れと、後から広がる旨みが心地よい。塩の効かせ方も絶妙で、最初の一皿として完璧なスタート。
和牛カルビは、王道ながら完成度の高さが光る一品。脂はしっかりあるが重すぎず、焼くことで甘みが前に出るタイプ。白ごはんを我慢するのが大変なくらい、分かりやすく美味しい。こういうストレートな旨さのカルビがあると、店全体への信頼感が一気に高まる。
箸休め的に頼んだピーマンが、意外なほど良い仕事をする。瑞々しく、焼くことで青臭さが消え、肉の脂をリセットしてくれる存在。こういう脇役がしっかりしている店は、総じて満足度が高い。
鶏軟骨はコリコリ感が心地よく、焼肉の合間に挟むとリズムが変わって楽しい。噛むほどに旨みが出て、ついもう一皿頼みたくなるタイプ。お酒との相性も良く、会話が弾む。
骨付きカルビは、豪快さと旨さを兼ね備えた一皿。骨周りの肉特有の濃い旨みがあり、多少焼き込んでも硬くなりにくい。手で持ってかぶりつきたくなる衝動を抑えつつ、じっくり味わいたい。
そして今回のハイライトが、国産ブリスケのすき焼き。焼肉店でこのクオリティのすき焼きが出てくるとは思わなかった。さっと火を通したブリスケを卵にくぐらせると、赤身の旨さと脂の甘みが一体化し、一気に幸福度が跳ね上がる。途中からは完全にごはんモードに突入。
〆は冷麺。さっぱりしつつも、スープにコクがあり、焼肉の後でも物足りなさがない。口の中をきれいに整え、最後まで満足感を保ったまま食事を終えられる。
肉、焼き、サイド、〆まで流れが美しく組み立てられており、「焼肉ってやっぱり楽しい」と再確認させてくれる一軒だった。
