神楽坂で日本料理。
飯田橋駅西口から向かう神楽坂下。
長めに続く夜坂は、
毘沙門天を備え煌々とお店の灯りが連なります。
坂から離れる小路は、
時に石畳が
時には階段が
神楽坂の街に風情をもたらしています。
そんな小路にある石かわに訪れるのは
虎白に行くことが多くなり、およそ一年半ぶりの訪問。
個室にて仲良くさせて頂いている食べることが大好きな方たちと。

毛蟹と香川産アスパラ。
酸味有る出汁ジュレとしょうがと共に。
素材の味が濃く立つため炭酸のある麦泡酒と合います。
先付けに朱色が入ると食欲が増します^^
稚鮎とそら豆
比較的に穏やかな顔の活け稚鮎の揚げ。
琵琶湖産の稚鮎と鹿児島産のそら豆。
少し甘味のある木芽ジュレに付けて。
ビール衣でかなりカラッ!とした食感が心地良いです。
鱧とじゅん菜
天草産の大きなぼたん鱧。
少し甘みがある梅干しと共に。
広島産じゅん菜が非常にツルッとしていて今シーズン一番旨!
出汁の旨味に支えられてホッとする椀。
真子鰈昆布〆と海胆
昆布がしっかりきいた淡路産真子鰈のお造り。
函館産のキタムラサキウニが濃くしっかりした味と香りがあるけど後味も良い。
蛍烏賊の飯蒸し
モチモチの餅米と富山産の蛍烏賊。
最近の食べた中では、特に柔らかく味わい残ってる一品。
生ではない火を通した蛍烏賊のぷにゅっとした良さがあります。
鮑と肝ソース
唐津産鮑を蒸してお皿に。
お皿に残る鮑の旨味汁がちょっぴりうれしい。
シンプルな鮑煮を肝ソースと共に濃厚な状態で食べます。
鮑自体の味は濃くないけど、仕上がりの状態が良い。
残ったソースをどうやって頂こうかな~と思っていたら
やって来たのは米ではなくパン。
八丈島海苔と卵黄が入ってる肝ソースとパンが意外と合う。
甘鯛酒盗焼きとアスパラ
酒盗焼きと七味焼きの濃そうなイメージですが程よい刺激と味わいで
お酒がススム君。
和牛
熊本産和牛サーロイン。
薄紅色に色が差した牛肉が綺麗。火の通り方もレア気味で好みです。
蓮根を敷いてみたらしのように甘味あるタレと共に。
蛤と野菜煮
千葉産蛤。生きくらげ、若芽、葱、蕪と共に。
白く濁る蛤のエキスが染み出ていて(≧∇≦)b
生きくらげってあまり食べたことありません。
プルン♪なんと心地の良い食感です~^^
主の蛤もふわふわ~。この食感は丁寧な仕事の表れですね!
桜鱒と木芽ご飯
桜鱒~!
ご飯と鱒の相性が抜群です。
木の芽が爽やかな緑の味と香りを口に運びます。
定番の大きななめこ汁がご飯と合う。
メロンと黒蜜の寒天
綺麗な江戸切子と一緒に何合かお酒を頂いています。
食事と合わせて2万後半くらい。
日本料理の流れを正道に組む石かわ。
師匠にあたる勝俣さんのことをお伺いすると
今でも続く感謝と尊敬の念が溢れる言葉でいっぱいでした。
その思いを形にしたお店は、丁寧な接客や食材の丁寧な下準備に表れています。
また行きたくなる大将の想いが篭ったお店です。
