天ぷら発祥の日本橋人形町で、2016年に静岡から移転リニューアルオープンした天ぷら店です。
「天ぷら食って蕎麦で〆る」をコンセプトに、厳選した野菜や魚の天ぷらのみならず、〆には
喉ごしの良いそばが食べられます。5周年を迎え、ミシュランガイド4年連続で星獲得されました。
店主さんは、静岡県のご出身で、ご実家が蕎麦店だったそうで、そちらで7年、日本料理店で2年
修業され、2000年に『蕎ノ字』を開業。「静岡で長年扱ってきた最高の野菜と魚の天ぷらを
東京の人にも味わってほしい」という想いから、東京・日本橋へ移転したのだそうです。
天ぷらは、静岡の人参や、熱を入れるとアワビのような食感になる玉取茸など、東京では出回る
ことが少ない静岡産の野菜やキノコ、駿河湾の魚介類、さらに鹿肉なども天ダネにしているのが
特徴です。また、過去の修業経験を生かして提供する〆の蕎麦は二八で、毎日手打ちしています。
凛とした雰囲気のある店内は、檜を使用したカウンター8席のみ。東京にいながら、静岡の旬の
食材の魅力を、存分に堪能できます。ランチは12時一斉スタート。1番奥の席で、店主さんの
お仕事ぶりを、間近で見ることの出来る絶好のポジション。天ぷらのコースは写真コメント参照。
私などが語れるようなお店ではないので、すでに数十回と通われている食通のマイレビ様や
HP等から抜粋した情報を、記載させていただきました。名店でありながら、驕ることなく
初めての私にも、常連さんと同じように接してくださり、美味しさと楽しさでアッと言う間の
2時間でした。玄関までお見送りしてくださり、店主さんとツーショット写真まで頂戴しました♪
エビの中でも1番愛する車海老を、最高の状態でいただくことができ、言葉になりませんでした。
