店主さんは、都内の鮨屋や日本料理店などで勤務ののち、京都「あじ花」や「炭屋旅館」で修業。 東京に戻り2010年に独立し此方をオープンしました。奥様である女将さんとお2人で切り盛り。
店内はカウンター4席、2席卓と4席卓の小じんまりとした空間で、一見敷居の高い印象なのですが
家庭的な雰囲気を醸し出しており、木の温もりを感じる暖かいイメージでほっと寛げるお店です。
最初に大将が挨拶に来てくださいましたが、とても腰が低く実直なお人柄が伝わってきました。
小規模ゆえに極力お客様の希望に沿うよう、食べたい食材や調理法等事前に色々と相談できます。
提供されるのは、京料理の流れを汲む日本の四季の移り変わりを皿の上に美しく映し出すような、 旬の野菜や魚で構成される12~13品の仕立て。夜は2万円と3万円のコースのみで3万円を選択。
日々豊洲市場で出会う旬の食材と、店主さんが修業時代から交流ある農家から直接仕入れる京野菜 料理に合わせるお酒は、日本全国の日本酒が約40種類。ワインはブルゴーニュやシャンパーニュ。
先に言わせていただきますと、私の誕生日で招待してくださった席なので、ナマモノが苦手な私の
ために大将とご相談の上、私仕様の火の通った物がたくさん出てきます。新鮮な魚介類がもったい ない等の批判はご遠慮くださいませ。私のための心遣いですから本来は出されたままを頂きます。
【飯蛸の桜煮】明石から届いた飯蛸を柔らかく炊いた物
【煮物椀】下は海老を使った真薯、上は茹で上げの車海老と菜の花を、澄まし仕立てにした物
【お造り】青森の平目・大阪湾のとり貝・北海道の牡丹海老。牡丹海老のお頭はのちに焼いて
提供されるので避けておきます。手前の緑色は牡丹海老の卵。松前醤油・呉の藻塩で
頂きます。根室の雲丹は無添加でこのままでも良いし塩レモン・山葵醤油でも自由に。
【焼き物】琵琶湖のほんもろこは丸ごと頂きます。このままでも二杯酢でも美味しいです。
【手巻き寿司】余市のあん肝といくらの海苔巻き(私には煎りからすみの海苔巻きでした)
【牡丹海老の頭】先程のお造りの海老の頭を香ばしく焼いた物。全部カリカリで頂けます。
【蒸し鮑】蒸し鮑はその物を蒸しただけで何も味付けをしていない自然な物。染み出たエキスまで
頂きます。鮑の肝はポン酢で。鮑の歯は軟骨の成分なので火を通すとなくなってしまう
ため私にはないですが2人が美味しいと絶賛。私の肝はぽん酢で漬け焼きでした。
【牛肉のしゃぶしゃぶ】春野菜は春キャベツ・京都の湯葉・蕗の薹です。
【松葉ガニ】鳥取の松葉ガニを生きてる状態で見せてくれました。カニ中央のお星様に見える部分
は心臓でまだ動いていました。取り出すともう動きませんが、そのまま頂きます。
食べた2人はクラゲの様な食感で苦味があり美味しいそうです。私の分は茹でカニ。
【お食事】氷魚(鮎の赤ちゃん)とめかぶのご飯・赤出汁・香の物。めかぶのとろっと粘る感じに
食が進みます。赤出汁から香の物まで一切の手抜きなしで、上質な味わいでした。
【甘味】自家製の桜餅・お抹茶
スタートが遅かった為、この時点でお客様は私達だけとなり、突然照明が消え真っ暗になります。
大将と女将さんがHappy Birthday~Тo~You~♪と歌いながらバースデープレートの提供でした。
中央には先ほど立ち寄った「しろたえ」さんのレアチーズケーキが乗っており、その周りを愛媛
の甘平みかん・淡雪・スカイベリー・マンゴーで彩られていました。しろたえさんのレアチーズは なんという幸運でしょう。(プレートに私の本名が入っており画像UP時に塗りつぶしています)
お料理は全てが美味しく大将も女将さんも素敵な方々で、とても素晴らしい時間を過ごせました。
