今年の焼き鮎は富山県の井田川(神通川の支流)の子、昨年9月上旬に頂いた物よりは
少々小ぶりの個体。まあ時期的な物もあるとは思うが・・・
鮎の香りはしっかりしておりました。
私にとって本命の鮎刺しは、今年はさらに小ぶりに感じたが、旨味はすごかった。
色んな所で鮎刺しを頂いているが、特筆級の旨さだった。
口の中で鮎の旨味成分が溶けだして、食べた瞬間顔がほころぶのを止められなかった(笑)。
使われている醤油が鮎の味をさらに活かしているのだろう。醤油の銘柄を聞き忘れたのが
悔やまれる。
鮎刺しは10月上旬が提供限界とのお話でした。
