名古屋市営地下鉄・丸の内駅から徒歩数分。ビジネス街の路地裏で比較的静かなエリアに佇む高級寿司屋さん。なかなか予約が取れないほどの人気店です。
凛とした雰囲気を想像しながら暖簾をくぐると、既に先客のグループが談笑しながら食事を楽しんでいて、思ったよりもずっと和らいだ雰囲気。ピシッとした凛々しさを漂わせながらも、気さくな大将や奥様が優しく場を和ませてくれる居心地の良い空間です。
メンバー全員が揃って、やおらコースが始まるのかと思ったら、その前に大将が本日のネタの披露をしていただきました。
佐渡産のマグロや浜名湖産のしんこ、はたての生ウニなど美味しそうなネタのオンパレード。何よりも撮影する間、待っていただいたのがレビュアーとしては有難い限り。それぞれの客に合わせた気遣いが感じられます。
いただいたのは、先ずはじゃがいもとマスカルポーネのフレッシュキャビアのせ、だるまイカ煮付、フォアグラ&マンゴーのトースト、ウニのリゾットの卵巻き・サマートリュフ添え、トウモロコシ豆腐のじゅんさい椀、鰹とフライドエシャロット・いぶりがっこのシャーベット添え、フルーツトマトのたまねぎドレッシング。
まるでフランス料理かと思うような寿司屋さんの概念を遥かに超えた逸品ばかり。
どの料理も美味しすぎるくらい美味しいのですが、特にウニを使った小さなオムライスという感じのウニのリゾットの玉子巻き・サマートリュフ添えをひと口頬張って、トリュフとウニの香りが口の中で広がった瞬間は忘れられない感動です。
大将がウチの十八番だと出していただいたフルーツトマトのたまねぎドレッシングも、爽やかな酸味と仄かな甘さの見事なバランスに舌を巻く一品。次の握りに移る前のお口直しとしての役割もあるのかもしれませんが、そのサッパリ感はとても印象的です。
握りに移ってからは、浜名湖産しんこ、鯵、マグロのちあいぎし、トロ、アワビ、ウニ、玉、穴子(塩とタレ)と続き、最後に削りたてのおかか手巻きという目からウロコのような一品をいただきました。
食べられる瞬間にピンポイントでタイミングを合わせて、シッカリ熟成され握られた寿司の数々。正に職人技という言葉がシックリくる見事な作品ばかりです。
最初から最後までホントに美味しい料理の数々をいただいたわけですが、実は密かに気に入っていたのが自家製のガリ。隠し味に蜂蜜を使っているのだそうですが、甘酸っぱく広がるガリの風味は優しさイッパイ。ガリだけをおかずにしてご飯が食べられそうなくらい旨味のあるガリでした。
私にとっては初めての「超」が付く高級寿司店。でも、この店ならガチガチに緊張することもなく、本当にくつろぎながら料理を愉しむことができます。
実現するかどうかはわかりませんが、ぜひ、カミさんを連れてもう一度うかがいたいと思います(^^)
