画像15枚追加。今年も8/29はカルネヤ。
目玉は60日熟成ブラックアンガスのTボーン。焼く前はそれほど熟成香がないのに、焼くとふんわりと香り、軽いのでサクサクと食べられてしまう。焼きワザは神レベル。揚げハラミのタルタルソースも絶品。この時期の桃とモッツアレラのサラダは鉄板だし、カルネクルーダもカーチョエペペもはずせない。仏産地鶏とポルチーニの豆豉風味は新メニューで中華風が面白い。デザートの黒イチジクのタルトとバジルのソルベはあっという間になくなった。熟成肉だけじゃない。何でもウマイ。

クリスマスイブのランチ。特別メニューではなくいつものメニュー。カルネヤバーガーは神でした。他でハンバーガーを食べる気がしなくなった。ランチタイムのオールスターズはとってもお徳。夜のグランドメニューからのオーダーも可能というフレキシブルさも素晴らしい。

最近熟成肉を謳っているお店が増えているけれども、本当に肉を知り尽くして、本物の熟成した肉を、美味しく食べさせてくれる店はほとんどないでしょう。
土佐あかうしのカルパッチョ、いわて短角牛のカルネクルーダ、ルッコラとトマトのサラダ、さの萬熟成牛のビステッカ、さの萬熟成牛のカツレツ、カチョエペペ、ティラミス、ゴルゴンゾーラのチーズケーキ
前菜ではカルネクルーダとカルパッチョはマストオーダー。メインは熟成肉を使ったビステッカやカツレツもマスト。肉の聖地。付け合せの野菜もウマイ
ワインはこんな感じで、とお願いすると何本かオススメしてもらえます。メニューにはないレアなワインもあり。
3人でビール、ワイン2本、前菜3皿、メイン2皿、パスタ1皿、ドルチェ2皿、コーヒーでお会計は@11,500円。安い。

29の日に生まれた肉男の誕生日会をカルネヤで総勢10名にて。
・カルネクルーダ:カルネヤと言えばカルネクルーダを食べなきゃ始まらない。
・尾崎牛の焼しゃぶ:薄切りにした尾崎牛を軽く焼いたしゃぶしゃぶ仕立て。塩昆布がアクセントに。
・豚肉のウィスキー焼き:玉葱他お野菜たっぷりのソース。結構なボリュームだったけどサッパリしていてあっという間になくなった。
・アンガス牛ハラミのロースト:脂の少ないアンガス牛のタフでしっかりした繊維質。
・熟成肉のカツレツ:熟成肉のカツレツはカルネヤがNo.1!ホルスタインの熟成肉です。
・あかうしのロースト:美しくローストしてもらってポルチーニたっぷりのソースをどん!!!

肉祭りでカルネヤへ。カルネ=肉 というまさに肉イタリアン。貸切特別メニュー。
・和牛レバーの香草ソースカルパッチョ:レバーの味が濃くて甘い!
・蝦夷鹿のカルパッチョ:鹿は味そのものはマイルドなんだけど歯ごたえがあって野性的な感じ
・カルネクルーダ:サマートリュフが香る。肉がとにかく甘い。
・鶉の塩麹漬けグリル:いい塩梅で漬かってます。
・モツクッキングCONシャンツァイ:ホルモンもカルネヤではこんなにオシャレでうまい料理になってしまう。
・いわて門崎丑のロースト:イチボとランプ。イチボは火を使わずに牛脂をまわしかけて火入れしたという一品。もう絶品!!つけ合わせの野菜はホワイトアスパラとマッシュポテト
・60日ドライ熟成のホルスタインのサーロインカツレツ:熟成が進んでいてブルーチーズを纏っているかのよう。
・60日ドライ熟成のホルスタインのリブロースステーキ:サーロインよりじっくりと旨味を感じることができる。熟成が進むとアミノ酸が増えるんだね、と実感ができるでしょう
・カチョエペペ:チーズとブラックペッパーだけのパスタ。なんでこんなに旨いのだろうか?
