■焼鳥好きのみならず、もはや説明不要の超人気店『鳥しき』
前回の定点観測は私が予約で頑張ったが、今回は焼鳥好きに友が実に1000回以上コールをして予約確保。定点観測6回目。
■店のシステム:
完全予約制・基本的にはお任せコース後払い制
上述の通り、毎月1の日(休みの場合は翌日)14:00~ 17つの席確保を目指してひたすら電話を入れる。過去に私は719回目にやっと繋がった経験があるが、ご一緒した友は今回の予約を取るために1000回以上コールをしたとのこと。
■訪問時の状況:
平日19:00に訪問。厨房を囲む17席は当然のことながら満席。この超難関の予約を確保した面々の顔には、自然と笑みがこぼれている。

■寸評:
NHKプロフェッショナルでも紹介された店主池川氏が仕切る店。兎角、有名店になると高飛車になり、札びらで頬っぺたをひっぱたく常連で全ての席が埋まってしまう、寿司屋Sや日本料理屋Kと違い、此方は常連だろうが振り客だろうが、上述の予約の壁を越えなければならない。そういった意味では、常連に媚びる必要もない。こういった主義を貫いている店主に、先ずはあっぱれ!と言いたい。
料理の腕は折り紙付き。
今回、友と驚いたのは、丁度1年ほど前に来店した時の我々の会話を店主が憶えていたこと。こういったことが接客にもつながっているのだろう。

【再訪5】:定点観測:最近、提供速度が遅くなった様な…だが味は流石の「鳥しき」
国家試験の数日前。その分野の専門家でもある親愛なる友からお誘いを受け、約半年ぶりに超予約困難店『鳥しき』の暖簾をくぐる。今回5度目の訪問ゆえ、然程の緊張はなかったが初めて大将(焼き場)の真正面席に案内され、見た目怖そうな大将間近での宴となった。
初めての客には店のシステムや好き嫌いの好みを聞いているが…
「いつもと同じで宜しいですね」のひと言に、友と顔を見合わせ「我々って大将に認知されているのかなぁ?」と嬉しくもあり。酒が進み大将の言葉を肯定的に受け止め「常連枠ってないの?」とお調子者が聞く。すると…
「大変申し訳ございません。うちはそういうのは一切やっていないんです」と術もなく断られてしまった。最近は以前にも増して予約が取りづらくなっており、次回も指が痛くなるほどのリダイヤル必須ということか(哀)

「高級焼鳥店」の中では、わたし的には最高峰の店。願わくば予約がもう少し簡単に取れるようになることを祈りつつ。

一昨年の【初訪】以来、年に何度か定期訪問を重ねてきたおそらく「日本で1番予約が取りにくい焼鳥店」目黒の『鳥しき』、運よく予約を取るに恵まれ、4ヶ月ぶりの訪問である。
今宵は親愛なる方と…友の娘の「初節句をお祝いしよう!」という趣向だ!(単に「鳥しき」で呑みたい口実だが、ストレスフリーの素敵な方々と!)
週末の花金(なんと!13日の金曜日)
店内は我々の席を除けば思い切りの満席状態。(人気の程が伺える)焼き場を挟んた対面には日本を代表する作曲家が、絶品の串を頬張りながら仲間数人と和やかに談笑をしている。ここでは有名人も金持ちも貧乏人の差別もなく、ひたすら美味い串に舌鼓を打つ。(但し予約が取れた方々に限られるが…)

19:00スタートではじめた宴だが、結局18本を食べたが通常の倍4時間を要してゆっくりと愉しんだ。(その分会話は弾み愉しかったが…)
主催者ゆえ、2次会の準備もしっかり!素敵なBarも用意していたのだが、淑女は流石にTime UP!ガラスの靴を残して「かぼちゃの馬車」で去って行く。(さようなら~♪シンデレラ!:笑)

【再訪3】:勿体ない利用法…*今訪問は会話を愉しむ目的ゆえ画像なし
既に説明不要の超予約困難店『鳥しき』
先月に引き続き、弛まぬ努力の果てに席を確保し3度目の訪問となった。
今宵は普段から大変親しくしていただいている、平家25代目当主をお招きし、最高の料理を味わって貰おうという趣旨だ。
10月某日
目黒駅で落ち合い店に向かう。普段と変わらず気持ちの良い接客で店内に促される。
「お任せでお願いします。希少部位は何がありますか?」
「本日は全て揃っておりますので、順番にお出しいたします」この言葉に期待感が膨らみ生ビールで乾杯~♪
まずは「ささみ(山葵)」からスタート。当主の顔もほころび満足そうな表情に、今宵の選択が間違っていなかったことを確証する。
ビールを飲み干し、好みを伺うと「赤ワイン」をご所望とのこと。
いつもは¥4000台の「SILENI」あたりを頼むのだが、今宵は奮発して¥6000台の赤をお願いする(銘柄失念)
「かしわ」「血肝」「波」と続き…そろそろ希少部位と思い当主の皿に目をやると、まだ前の串が残っている。そうなのだ!当主は酒好きだが、アテは余り食べないのだ。
グラスが空になり同じ銘柄を頼む。
その間、私にだけ「ハツ元」が出される。
「此方にも…」と店主に声を掛けるが「余りお召し上がりにならないので」と当主の皿を確認し店主が応える。当主も「僕は気にしないでください」とグラスだけが空になる。その後、2時間弱でワイン3本、〆でシャンパン1本が空になった。
店を出て、当主と駅前で握手をして別れ、恵比寿駅のベンチで30分ほど休んだまでは憶えているが…次回、当主と飲む時は「酒メイン」の店の方が良いという教訓を学んだ。(^_^;)

★今回の訪問で判ったこと。
今回はじめて平日に訪問(過去2回は土曜日)したが、客層が明らかに違った。
常連と思しき客が皆無なのだ。土曜日は店主、女将ともに顔見知りの客が多く、希少部位も事前予約なのか殆ど提供されることがなかった。
しかし、今回は「希少部位」は全てあるとのこと。残念ながら食べるまでには至らなかったが、平日予約の方が「希少部位」に出会える確率が高いのではないだろうか?(単に仕入れの都合かも知れないが…)
また、頑張って予約しよう!(^o^)

【再訪2】:弛まぬ努力の果てに…
715回のリダイヤルの成果を感じる日がやって来た。(⤵【再訪予約】の項参照)
初秋のある日、今年2度目『鳥しき』の暖簾をくぐる。
初訪の時も感じたことだが、我々と1組以外ほぼ常連客と思われる。
(その理由:我々は名前を告げ確認の元に席に案内されるが、他の客はにこやかに店主と挨拶を交わし、案内されるまでもなく席につく=常連は席も指定されているのか?中には手土産持参の客も居る)
私も常連になりたい…が、どうすればなれるのか?毎月700回以上リダイヤルしなければなれないのか?
そんな予約困難、超人気店の『鳥しき』だが、再訪日も料理・接客ともに期待通りの素晴らしさだ。
食べたい部位を告げ”おまかせ”でお願いする。(希少部位:アキレス腱・そり・合鴨を指定)
前回同様に別次元のひと串・ひと串に感動し、贅沢な時がゆっくりと過ぎてゆく。「どうか腹が一杯にならないでくれ!」永遠に食べていたい。
私より数倍、味に敏感な相方も頷きながら串をすすめる。すると…
「ねぇ!この白玉の素晴らしさが判る?」いきなりの質問に戸惑う。
曰く、普通の白玉(鶉のたまご)は99%全熟で供される。しかし此処は半半熟(半熟より更に半熟状態)のトロトロだ。
この食感にする為には、焼きの時間を考慮し茹でなければならないだろうとのこと。ここまでの状態を完成させるまでに、試行錯誤を繰り返し、弛まぬ努力をしたことだろう。
これこそが人気の所以か?ミシュランの判定員は、この白玉を食べたのだろうか?
今回、特に素晴らしかった串は、「白玉」「ちぎも」「アキレス腱」「そり」
訪れるたびに感動がある。さぁ!次回はどんな感動を与えてくれるのだろうか?来月の訪問が今から愉しみになった!

【初訪】:料理とは五感で愉しむもの!そのことを改めて教えてくれる居心地いい名店
「食べログ」界では説明不要の名店『鳥しき』の暖簾をくぐる。
遡ること1か月半前の月初め。
108回目のリダイヤルで、今日の予約を取るに至った。常連でもそのシステムは同じらしく、知り合いの常連によれば「108回なら少ない方ですよ!」と驚くべき言葉をいただく。
幸運にもお誘いを受けて訪問する(した)方は、改めてその努力に謝意を伝えたほうがいいだろう(笑)
6月某日、口開け18:00丁度に暖簾が出される。
「お待たせいたしました」深々と頭を下げ店内に誘(いざな)われる。
1番客。カウンター正面の”板前”に座ると、目の前の”ショーケース(冷蔵庫)”に様々な部位が並んでいる。その綺麗なピンク色の部位を眺め、これからの料理に心が躍る。
「ご注文とお任せがございます。お任せはお腹がいっぱいになる少し前に仰っていただければ。。。」
「お任せでお願いします。但し”ちょうちん、そり、ちぎも”は食べたいです」常連から伝授された技だ。お任せの場合、まさにお任せなので、食べたい部位が提供されないことがある。そのため、食べたい部位がある場合は事前にしっかりと予約するか、口開けならば伝えておくことが肝心だ。
燐と鉢巻を巻き、焼き場の面する方がご主人であろう。
一見強面ながら客全てに対し、実に繊細な心配りをしている。接客も料理の美味しさの一部というをご主人の所作から感じ取れ、店員ひとりひとりにまでそれが伝わっている。実に居心地良い店である。
■当日の状況
口開け18:00に入店したのは我々夫婦と常連の男性2名。
その後、50代の女性グループ(常連)、20代のカップル×3組(内:常連2組)、50代男性と30代の謎のカップル(常連)で18:45には満席。驚いたことに常連率76% それだけ人を惹き付ける店ということだ。(18:00~19:00の間にお土産用の弁当の予約客2組が来店)
お通し(自家製ぬか漬け)が供され、まずは生ビールで喉を潤す。
焼き場では色々な部位が心地よい音をたてながら焼かれていく。喉を潤し泡(Comte de Beligny /Chateau de Beligny)へと変える。
さて、愉しい時がゆっくりとすすみはじめる。

✳︎血肝:レバー嫌いでも、これなら食べられるであろう。概念が変わる逸品
✳︎ささみ:塩が身の甘さを引出し、生山葵と融合して実に美味い。シャクッとした歯触りが新鮮さを物語る
✳︎銀杏
✳︎軟骨:軟骨の廻りの肉の割合が大きい。一気に口に頬張りハーモニーを愉しもう
✳︎白玉
✳︎砂肝:これぞ!砂肝の歯触り。シャクシャクと繊維を断ち切る感触がたまらない
✳︎つくね:中に軟骨が練り込まれており、コリコリとした食感がいい。タレは甘過ぎず塩梅がいい
✳︎厚揚げ:タレを付けながら焼き上げた厚揚げに、豆苗と茗荷の微塵切りが載る。一般的な素材ながら唸る逸品
✳︎皮:今まで食べた皮の存在をなかったことにしたい。皮がこれほど甘いとは!概念が変わる逸品
✳︎椎茸
✳︎そり:”そり”とは足の付け根の部分の肉。弾力、濃さ、ジュウシーさ全てに◎
✳︎かしわ:言葉にならない
✳︎オクラ
✳︎ちょうちん:口の中でプチッツとはじけるちょうちんは、濃厚で肉とのバランスを愉しもう
✳︎小玉葱
✳︎ひざ:鶏の膝ってどこだろう?疑問を唱える妻
✳︎ぼんじり:皮同様に今迄食べてきた”ぼんじり”をなかったことにしたい。言葉にならない
✳︎手羽先:ここでStop!全18本よく食べました。
✳︎そぼろ丼(小):甘辛いそぼろはしっかりと存在感があり満足度大
✳︎親子丼(小):トロトロのたまごとしっかりと歯応えがある肉、〆には勿体ない
✳︎鳥スープ:上品でコク深い逸品

食事は人の心を豊かにする。
ミシュラン店、「食べログ」焼鳥部門全国第一位、予約超難関店などなど。。。固定概念があり贔屓目で見てしまうところを差し引いても、この店は素晴らしい。
『鳥しき』に来るために明日からまた仕事を頑張ろう!そんな気持ちにさせてくれる店。わたし的には久々の総合★5(満点)だった。
