【ご経歴】
中村英利氏
京都「京料理 まる多」や「青柳」で修業。赤坂「花のれん 花楽」の料理長を経て2022年4月「明寂」を開業。
【特徴】
・素材の持ち味を最大限に引き出したお料理
・必要最低限な調味
・「出汁に頼らぬ日本料理を」
・海水だけで素材の旨味を引き出すなど
【学び・気付き】
・これまでの日本料理を見直し再構築している印象。
・今までにないアプローチの仕方。既存の日本料理の枠組みにとらわれず、あたりまえを疑うお姿に衝撃。ex)天ぷらは小麦粉や薄力粉を使うことがあたりまえだが、それってどうなのか。という視点から、天ぷら粉自体に味を入れるなどする。
・コース中盤「なすのそうめん」で初めて昆布と鰹節を使用。それ以前のお料理には昆布や鰹節を使わない構成。よりグルタミン酸やイノシン酸をはっきりと感じる。
・お客さんも自分で料理を仕上げるなどのエンタメ要素あり(本ししゃもの衣巻寿司)
・全く食べ疲れないコース
・メリハリがはっきりしている
・OMAKASEで予約したが、3日前に個別で事前確認メールが来た。(松茸コースによる料金変動の確認とアレルギー確認など)今までOMAKASEで予約してたが、初めての体験。ホスピタリティを感じる。
・秋鮭は皮目はしっかり目の焼き目。炭火の香りをしっかりつけて、身はふわりと強弱を。
