ここは焼き鳥やさんだったの、というくらい外からは中が見えない、ちょっと敷居が高い感じの外見です。
お店に入ると暖色の照明で落ち着いた雰囲気。高めのカウンターには二人掛けの座りやすいカップルシートが並んでいます。
プレモルで喉を潤すと、つきだしはうずら卵のおろしと浅漬け。なんか上品でこれからの焼き鳥に期待が高まってテンション上がります。
白レバーたたき
思わず頼んじゃいますね、白レバー。山葵が乗っていてちょっと醤油をたらして。一口食べたらほんのり暖かい。冷たいかと思ってたのでサプライズです。外側だけ熱が入った新鮮なレバーは、トロトロに舌の上でとろけます。激ウマです。
焼鳥5本コース
ほんとは10本食べようかと思ったけど、とりあえずお試し5本で。
ぼんじりから出てきました。表面をカリッと、噛むとじゅわっと甘い脂が溢れ出てきます。すごく優しい塩加減。海の塩を使っているそうです。
そのあと、つなぎも塩で。背肝はタレでした。このタレがさっぱりで全然しつこくない、素材の味を生かすタレです。
ももカルビ、手羽先と塩で供されましたが、火入れがすごく丁寧で、塩加減も酒飲みにはやや薄いと感じるくらい絶妙。
鶏肉の旨さを引き出す工夫が感じられます。
日本酒は白ばくれんから澤の花へと進み、串を追加。ちょうちんは10本しか入らず、今日はすでに売り切れとのこと。
心=ハツともう一本、名前を忘れてしまいましたが、美味しくいただきました。
7本中6本が塩で出てきたのですが、鶏肉の旨味は塩の方がビビッドに感じられますね。タレで出す方が少ないんでしょうね。
それでも物足りなさは全く感じませんでした。
初回の今日は軽めに退散。次回はちょうちんを含め、もっとがっつり鶏の旨さを味わいに来ましょう。
