うかいグループも今年50周年、その50周年を記念に新たな世界、日本料理の真髄を追及し始めた。
オープンは2014年4月14日。
平日は夜のみで土曜、祝日は昼も営業。
夜は17000~昼は5000~
私はたまたまオープンの週の昼にキャンセルがでて急遽伺えることに。
店はスワロフスキーの入ってるジュエルボックス銀座の地下で駐車場はなし、近隣に駐車場有。
エレベーターを降りればすばらしい世界への入り口。
既に扉を開ければ、スタッフのお待ちかね、笑顔を絶やさず、案内された場所は檜1枚カウンター、ライブッキッチンへ。
席に着席すると料理長のお待ちかね、とご挨拶。
持ち物には、ちゃんとナプキンで隠す配慮。
飲み物は生ビールから、次に日本酒で、グラスにほんの少しの量でなかなかのお値段、ツレはノンアルコールだったが、グラスが空けば注ぎ、残りの便は冷たく冷やす配慮、丁寧なサービスは値段にも含まれているのだろう、御覚悟を。
さて、料理は、5000円の料理なので大きな期待は持っていなかったのだが、1つ1つに手間隙惜しまず、目の前ではライブで楽しめ、スタッフのすばらしい配慮に最後までお姫様気分。
最初に白だしの手打ちのそば、その上にはわさびおろしで頂く。そばのコシの強さ、出汁もしっかりかつおの香りが強く、白だしは濃いめであるがそばに絡んで何とも美味。手打ちは料理長自ら打つとのこと。
次にとうふ屋うかいでも出すしのだ巻きに梅のソースでさっぱりと。とうふが濃い味で炭火で焼かれているので香ばしい。
次の3段重で、焼き物にはサーモンの白味噌ソースで、わら焼きのかつおは塩ポン酢で、若竹と自家製肉団子の煮物。どれも申し分なし。
次に、九条ねぎと蛸のお団子とハマグリのお椀。このパフォーマンスは目の前で見ていられるので時間を感じさせず。
まず、鍋に具を入れる前のスープを一口飲ませてくれる、既に貝類でお出しをとってるのか、すばrしいスープ、ここへ具材を投入、そしておわんで頂くと、具材からの出汁がプラスされ尚一層旨味が口いっぱいに広がる。
次の土鍋の登場、めひかりの炊き込みご飯。お吸い物、漬物2種。
めひかりも炭火で焼くので香ばしさとめひかりの脂の乗り、そこへ新生姜と大葉も投入されると、さっぱりとまたごはんもほどよい硬さのあるご飯で満足の一言。吸い物は具材こそ全く入れず、出汁そのものなのだが返って旨さが際立つ、漬物も塩昆布も投入され旨みたっぷりで、きゅうり1つにも飾り包丁をいれるという手間、全てに脱帽。
甘味は料理長がスイーツのお店に通い考案したしものだそう、餡蜜に黒蜜をかけて食す、蓬餅や手作り寒天とあんこが入ってるので黒蜜は加減しながら食すと丁度いい塩梅なのでは、あんこは塩が強め。
〆のおうすもうまし。
何しろ、ここは一歩はいればお姫様気分を味わえ、料理や器の美しさについ次回の予約も入れてしまうのと、夜の内容も食べてみたくなるそんな昼のランチコースの構成。
さて、料理長は元横浜インターコンチ内にあるなだ万、会員制のお店、とうふ屋うかいで1つ星、割烹うかいの総料理長に抜擢。
また1つ今年のミシュラン候補のお店の幕開け。
余り知られていないのかまだ近日予約可能。
