自分史上最高のお店です。料理は一つ一つが本気で丁寧。素晴らしいネタに、最高のシャリ。接客も素晴らしく居心地の良い空間です。
つまみは金時芋とひじき。鳴門の沖ぼら、青森の平目の刺身。牡蠣のオイル漬けは油が香ばしくてじゅわじゅわ美味い。岩手の牡蠣を市場より早く届けてもらっていて新鮮だから縮まないそうです。余市産のあん肝ポン酢は燻製で、初めての美味しさ。スルメイカの醤油漬けは、見た目は塩辛なのに塩を全く使ってないそうで、自然な塩気と甘み。帆立、蒸しウニ、昆布の佃煮。
握りはサヨリの昆布締め。スミイカ、もしもイカに生まれたらこんな風に握ってもらいたい。金目鯛の昆布締め。圧巻の赤身、中トロ、大トロ。小肌。北寄貝炙り。
寒ブリ。イクラは甘みと海苔の香りがすごい。鯵。車海老は都度調理しているので、ほんのり温かくて、頭の方はミソで濃厚、尻尾の方がじんわり身が美味い。ウニ嫌いの外国人でもおかわりするという世界最高のウニ。煮蛤は部位ごとに火の通し方を変えているらしく、概念が変わる美味しさ。しめ鯖は果物みたいな爽やかさ。穴子は包まれて寝ながら食べたい柔らかさ。滋味深いお椀、お届け物にしたい玉子焼きを食べて、べったら漬けで〆。
もう一回転したい。
