◆出色の一皿に変えて
不思議な料理だ。
モダンだが、ノスタルジックな温かさに満ちている。
料理は店と分かち難く結びついていて、
石造りの隠れ家のようなエントランスに足を踏み入れて
秘めやかなラウンジでハーブ・ティーをすすりながら
トルコブルーのオブジェの上を水滴が転がる異空間に身を置いたときから
その体験は始まっている。
2階のダイニングに案内され、
ウッドを多用した寛ぎの洗練空間で食事が始まった。
料理は創意の感性が紡ぎ出すものだが、
ウッドの敷皿が象徴するように一貫した優しさに根ざしている。
例えば、気泡をたくさん含ませたトマトのパン。
そのふんわりした食感に驚きが有りながら、
口の中でマルゲリータ・ピッツァを再生するような親しみやすさも有る。
例えば、子持ち鮎と万願寺唐辛子。
鮎の苦みに焦がした香ばしさが加わり、
みっちりと詰まった卵の細粒の食感が心地よい。
炭化せんばかりに焼かれた万願寺唐辛子も
その甘みが鮎のペーストの苦みと相乗の旨みをもたらす。
見た目こそ違うが、そこには確かに和食のエッセンスが呼吸づいている。
例えば、渡り蟹と甘茶豆とミモレットのリングイネ。
蟹の身はホロホロと甘く、
甲殻のソースは甘茶豆とミモレットのザラっとした食感と共に
太くむっちりしたリングイネに絶妙に絡む。
イタリアンの王道の旨さだ。
例えば、藁の上の焼き落花生。
生感をとどめた素朴な美味しさが口に広がる。
殻を割って食べた子供の頃をふと思い出す。
どの料理にも創意の企みは有るが、それは悪目立ちするものではなく、
又その味わいは、その出自の原体験と自然へのリスペクトを想起させるものだ。
森のあたたかさに包まれ、土の匂いを嗅ぎ、水のせせらぎを聴く、
その中でかくれんぼをしているような無邪気な愉しさ、
