江戸前鮨をいただきます。
◎店内
つけ場を囲んだ9席のL字カウンター。
明るく清潔感のある凜とした雰囲気です。
店主のお人柄か、リラックスしてお鮨を楽しめる
和やかな雰囲気なんですよ。
◎接客
18時〜20時〜と二回転の予約制なんですが
その時間に、お客さんが全員揃ってから
「さ、スタート」って訳ではないようです。
予約した18時にお伺いすると…
先に入店していたお客さんは、良いペースで
食べて飲んでました。
こちらは、お客さん毎に料理を始めてくれるので
他のお客さんを気にせず自分達のペースで
食べられます。
これは、かなり嬉しい対応♡
個人的ですが・・・
指定の時間に全員揃い、一斉にスタートする
お鮨屋さんも多いですよね。
並んで座って、何か与えられるのを待つような
配給されているような、そんな感じが嫌でして。
ある程度、時間に制約があるのは致し方ないけど
食べるペースは、個々違いますからね〜
それに、お酒を楽しんだり、会話していたり
ペースもそれぞれ違いますので。

もちろん、アテから楽しみますよ。
カレイとタイラギのお刺身からスタート。
季節の食材を楽しめるんですけどね〜
珍味と言うか、なんと言うか…

一貫一貫、ネタの旨味を堪能できました。
もうね、こちらのシャリが旨い!!
某有名鮨店の方が、わざわざ修業に来られるほど。
硬めに炊き上げた米と鮨酢が上手く合わさって
一粒一粒、米粒が立っている赤酢のシャリ。
口に入れると・・・
ほんのり温かく、仄かな酸味と奥深い塩味。
この絶妙な塩分がね、堪りませんよ。
そして、ふわっとほどけて消えるんですよ。
あ・・・書いているだけでヨダレが(笑)
また東京に来た時に連れてきてほしいわ♡
