土曜日だというのにお気に入りのお店からはことごとく「満席です」と断られてやっと電話予約できた炭火焼専門食処白銀屋、このお店はその存在を知ってからずっと行きたいお店でした。
入ってみるとカウンター六席程度、相対して四人掛けテーブルが三卓くらい、その奥に二人掛けのテーブル、さらに奥に六から八席といったこぢんまりとした店内に焼き魚の匂いが充満しています。
先ずはビールに付き出しはししゃも、このししゃもが竹串に刺さっているところからしてステキ、美味しいです。
本日のオススメから何品か頼んで、それが焼き上がるまでにつまもうと酒盗三百円とほたるいか沖漬け三百円、この酒盗が絶妙で無性にご飯を食べたくなるほどの出来、旨いですねぇ。
ホタルイカも美味しかった、これは途中で少しずつつまむといいですね。
さて焼き物一品目はまぐろトロー串百八十円、日本人のマグロ好きはこういう串焼きまでにも及んでいるのですか、それにしても旨い。
二品目は特大つぼ鯛九百八十円、つぼ鯛を食べるのは初めてですけど、こんな焼き方が出来るのかと信じられないほどの魚の焼具合
炭火でじっくりと焼き上げてあるので骨の周りのコラーゲンがたっぷり残っていて、それでいて皮は焦げるほど焼き上げてあって、骨以外は全部食べてしまいました。
一杯だけ日本酒を飲んだのですが(天下一)、このまま飲み続けると割に合わないので黒かめ(芋)二千三百円のボトルを入れました、キープは出来ないので飲み切るか余ったら持ち帰るかですね。
さて、大山鶏の刺身ステーキ七百八十円が運ばれてきました、どんなステーキかと思ったら「鶏モモ肉のタタキ」で周りの皮を香ばしく焼き上げて中は刺身のまま。
軽く切れ目が入っていて、食べるときにハサミを使って自分で切り分けます、柚子胡椒か山葵を合わせるのですが、これほどの焼き加減の鶏肉は滅多に食べられません。
スンゴク旨いんですけど、言葉がでないんですけど、料理人さんをお呼びして抱きしめたいくらいなんですけど。
焼酎も料理にドンピシャでどうしてもっと早く来なかったのか、一人でも来れば良かったと海より深く後悔しました。
やっこ二百円は「その他料理」ではなくしっかりとしていて、いい箸休めになりました。
銀だらの西京漬け六百八十円、大抵の西京漬けは「味噌だらけ」で味噌を食べているのかと思うくらいですが、白銀屋の西京漬けは味噌はあくまでも脇役で魚が主体、身の中にじんわりと味噌を染み渡らせています。
勝手な思いですが、素材はそこそこ、値段もそこそこ、その隙間の中で料理人として少しはみ出すくらいの仕事をしています、素晴らしいです、心の中で拍手をしてしまいました。
お金を出せば、素材を厳選すれば、この店よりも遥かに美味しい焼き魚を食べることが出来るでしょうけど、この値段でこの焼き魚を出せる店は、他には無いでしょう。
料理人はさぞかし名だたるお店で修行されたのかと店長さんに聞くと、「料理はしていましたけどね」とのお答え、努力の先で勝ち得た秀才ではなく誰にも教わらなくても出来る天才なのか。
最後にこまい二百八十円といわし明太子三百八十円、この値段でこの味わいはおかしいだろう、焼酎を殆ど飲んでしまってさらに焼き魚の味が分かるのはおかしいだろう、と。
いい店はどうしても駅から遠くて分かりにくい場所にあります。
