浅草・吉原発祥で東京の郷土料理である桜鍋のお店
文明開化の流行料理として文化人・著名人に愛され、現在では
ヘルシー志向の高まりとともに美容・健康食としても注目されて
いる馬肉
こちらの中江では北海道生まれの牝馬を九州久留米で特別な
飼育法で6-7歳まで肥育し、脂と旨味ののったものだけを使用
今回は知り合いの方と土曜にランチ
ランチメニューは35食限定ということでしたので、開店の11:30に
合せて行ってきました

桜なべ、馬刺し、桜ユッケ、おしたし、馬刺し握り、ごはん、味噌汁、
デザート
なべは肉を煮込み過ぎると硬くなるので半生程度
脂身はしっかり煮込みのがよいです
馬刺しは生姜醤油
桜ユッケは味が付いてるので卵をといてそのままいただきます
以前、文京区の伝通院前にみの家の支店がありちょくちょく行って
たんだがなくなってしまい、今回は久々の桜なべ
やっぱり馬い!!
