京劇の有名な劇場・梨園劇場のある前門建国飯店1階の江南料理のレストランです。会食で個室を利用しました。
江南料理の代表的なものをいただきましたが、特に印象に残ったのが豚軟骨を梅で煮た话梅排骨という料理と「茭白」という野菜の炒め物、そして東菠肉です。
话梅排骨はほど良い甘味と香りで感動物の味。これはもう一度食べたいです。
茭白もなんともいえない独特の快い食感と甘味で、これは初めての感覚。私がどんな野菜なのかと興味津津なのを知って、後で料理人の方が実物を持ってきてくれました。
日本でも御馴染みの東菠肉(トンポウロウ)は壷入りで登場。私もよく家で作りますが、やはり本場のものは調味料が違います。
一見色が濃いので味が濃そうに見えますが、中国の醤油は色が濃くても味は薄味なのです。プルっとした脂身の食感で、じっくり手間と時間ををかけて作られたのがよくわかります。
そのほかの料理では孟宗竹を小さくしたようなタケノコを自分で剥いて食べる料理が美味しかったです。まったくアクが無く、いくらでも食べられそうな感じでした。
