名古屋・栄の古式蕎麦「玄水」で、昼限定の『蕎麦三昧』をいただきました。
静かな木のカウンターで一皿ずつ供される流れは、まさに“蕎麦を中心に据えた日本料理”。
先付は香ばしいそばスープ。やさしいとろみとそばの香りが立ち上り、心がほぐれる一杯。
黒胡麻豆腐は濃厚でなめらか、香り高い胡麻の風味が広がります。
八寸には鴨、いくら、板わさ、湯葉豆腐、焼き味噌などが美しく並び、秋の枝葉や栗のあしらいまで心憎い演出。
そばがきはふんわりとろりとした食感で、わさびの香りとともに旨味がふくらみます。大根おろしやきなこで味の変化も楽しい。
ホタテの変わり茶碗蒸しは、出汁の上品な旨味とほんのり甘みが絶妙。
活車海老の天ぷらは外は軽やかに香ばしく、身はぷりっとした弾力。スナップえんどうやモロッコインゲンの彩りも美しい。
翡翠なすは温かい天つゆでさっぱりと、淡路の鱧も上品で香り高い。
締めの蕎麦は4種の小盛りで、それぞれ異なる表情。
古式汁、くるみだれ、そして大根の絞り汁を醤油で整えたものの3種のつけ汁でいただきます。
最後のすだちそばは、出汁の澄んだ香りとすだちの爽やかさが見事に調和し、ふっと抜ける香りまで心地よい余韻。
甘味のアイスクリームで締めくくられ、すべての流れが自然で美しい。
帰り際には店主とも少しお話しをさせていただき、神奈川のおすすめ蕎麦店まで教えていただきました。
料理だけでなく、人の温かさにも触れられる、心に残るひととき。
