今回は レヴューを 5W1H 式でウォッチング。
■ WHERE (場所) :→駅からは遠いです。
旧 松戸三郷有料道路橋 松戸側のたもと、江戸川沿いにお店があります。
※古民家 大正5年竣工
自宅の居間を使って食事処としているのですが、通常 こういった木造の一軒家は寒いというのが
通例ですが、畳の下はポカポカしています。→床暖が入っているのです。
■ WHO (人): ご主人
このお店を始めたのが60からの手習い。志 高いところを目指す姿勢も主人の人柄を垣間見せます。
趣味の墨絵は教室も開いており 展覧会にも出品しているようです。
■ WHEN (変則的な営業日時)
週3日(金・土・日) 11:30~16:00まで となんとも変則的な営業スタイルです。
※夜はいつでも(平日でも)予約が入れば営業するそうです。 5名より
■ WHAT (こだわりの蕎麦)
契約栽培農家(長野県 黒姫) から直接仕入れた 玄蕎麦を自家製粉するために 敷地の横に製粉場を
もうけています。そばがらが大量にでるのでしょう。玄関の脇にはそばがらを枕用にと無料で配っております。
2・8 のせいろ と 10 の田舎
自家製粉した蕎麦を手打ちで製麺します。
特に田舎はつなぎを使用しない10割の蕎麦なので香り高いです。【10食限定】
可愛い手書きのカードと 猪口に入った水が一緒に供され
『この田舎そばは・・・蕎麦粉100%で粗引きのつぶつぶの実も入れて売っています。ぜひ最初の一口は
お水につけてお蕎麦の香りを楽しんでみてください・・・』とあり、その通りにすると蕎麦の甘みも感じられます。
穴子天は活け〆の大穴子をカリッと揚げています。身のぷりぷり感が素材の鮮度を物語っています。
■ WHY (クリエイティビティの媒体として)
ご主人のクリエイティビティがそこかしこに伺えます。クリエイターとしての自己表現の場として蕎麦と絵を
媒体としているのでしょう。とにかくスゴイ・・・。
■ HOW (家族が織りなすホスピタリティー)
外の待合のテーブルには蜜柑がおかれていました。食べながら待っていると
寒いので中でお待ちください と優しい言葉をかける 女将さん。丁寧な接客と優しい接客。素晴らしいですね。
ということで
帰りは 江戸川の土手沿いを冷たく澄んだ空気に ふかれながら 妻と子供と散歩しながら駅へと向かいました。
