名古屋・御園座のすぐ近くにある、食べログ百名店にも選出されている 『鮨 権左衛門』 に初訪問。
期待して伺いましたが、序盤から一気に引き込まれる“技の連続”でした。
最初の一品は タラの白子にあん肝ソース を合わせた逸品。
クリーミーな旨みが口いっぱいに広がり、いきなり心を掴まれます。
しかも「ソースを少し残しておいてください」と言われ、食べ終わりに 赤酢のシャリを投入して混ぜて食べる二段構え。これがまた絶妙で、最初の皿からコースの世界観が一気に完成します。
続く クエ、鯖、鰹、蟹しんじょうの吸い物、サワラ と、どのネタも香りと旨みのキレが抜群。
ギンポの照り焼きと牡蠣のオイル煮、カマス と続き、
中トロはなんと 塩でいただくスタイル。これが驚くほど合う。
さらに感動したのが ネタに合わせてシャリの温度を変えて提供してくれること。
暖かいシャリで香りが立つネタは風味の伸びが違い、職人のこだわりが随所に感じられます。
後半は茶碗蒸し、縞鯵、そして 手渡しで供された鰯の握り。
この鰯が本当に絶品!脂の甘みと酢のキレ、シャリの温度が完璧で、今回のベストに確定。
玉子焼き、穴子巻きの後はデザートで締め。
日本酒も豊富に揃っていて、ペアリングで楽しむのもおすすめです。
総じて、技・温度・香り・構成すべてにおいて完成度の高い鮨コース。
名古屋で鮨を語るなら、ここは絶対に外せない一軒です。
