生きる経営の神様=稲盛和夫氏が創設された日本のノーベル賞『京都賞』に参加するため、京都へ。半年ほど前から予約して、伺いました。カウンター席で、心づくしのお料理を堪能。ご主人がテキパキとお料理を作りつつ、『アンパンマン』の”ジャムおじさん”に似たお顔で、優しい心が伝わる細やかな気づかいをしてくださる。スタッフは5~6人いて動き回っているのですが、慌ただしく感じさせない。お陰で、とても心地いい空気が流れています。
お料理は最初から最後まで、どれも海の幸、山の幸のバランスが良く、素材を活かした味付け。日本料理の基本に忠実なのに、独自性にも富んでいます。「次は何が出てくるんだろう?」とワクワク感もありました。
特に印象に残っているのが、土鍋ごはん。ご飯が出てくる前に、お腹がいっぱいになっていましたが、炊き立ての土鍋ごはんを見た瞬間、胃が「まだ食べれるよ」と教えてくれました♪ ご主人の実家の田んぼでとれたお米を使って、土鍋で炊いたごはん。一膳目は「ひとくち、そのままで」と。握り寿司くらいのご飯が、お茶碗に鎮座しています。一口食べて、ご飯の甘味が口中に広がり、幸福感でいっぱいに。
その後、自家製のふりかけ(しらす、鯛のふりかけ)や香の物が出てきて、お好みでごはんに乗せて頂くのです。さらに、「卵かけごはんは、いかがですか?」とすすめてくださり、色の濃い黄身が登場! 黄身をといて、ご飯にかける。そこへうなぎの山椒煮を乗せ、ごはんではさむ。ノリなどをちらして、出してくれます。これを軽く混ぜて、頂くのです。究極の卵かけごはんでした♪
デザートも充実していて、果物→自家製あんこ最中にアイスクリーム、栗をはさんで。最中の皮がパリッとしていて、ぎっしり入ったあんことアイスクリームの柔らかさと抱き合って、これも美味。最後の最後に、ご主人が「こんぺいとうは、いかがですか?」と手のひらの上に、優しく出してくれました。
ご主人が外で見送ってくださり、お料理が美味しいだけでなく、心づかいも全てが温かい、優しさいっぱいのお店でした。
