人材教育家&マナー講師の井垣利英でございます。このお店の常連のY会長に、妹と二人で、連れて行って頂きました。メニューを見ることもなく、Y会長のための特別料理が出てきます。
私の妹・年香は、以前、香港の航空会社の客室乗務員だったため、それを料理長に伝えたら、急きょ『香港風のお料理』を出してくださいました。
今回のお料理で私が一番美味しいと思ったのは、『宮廷風フカヒレの姿煮』です。しょうゆベースでなく、塩味ベースの上湯が上品で、あっさりしていて美味。
あんかけ好きの私は、どうしても、このフカヒレをご飯にかけて食べたくなりました。そこでご飯を注文。ご飯にかけて、フカヒレを一滴残さず完食しました。フカヒレと上湯で「最高のあんかけ」でご飯が進みます。
和牛ホホ肉のステーキは、外がパリッと焼けていて、中は噛む必要がないくらい柔らかくて、口の中でとろけます。ソースが黒酢でさっぱりしているため、牛肉の脂でベタベタする感じはありません。
こちらのお店は、老舗ホテルの中華料理らしい王道のお料理と、フレンチっぽい盛り付けが素敵。内装も落ち着いていて、重厚感とオシャレさがマッチしています。
