今週末、大阪に出張で来ているが、そこで気になる店を探していて見つけたのがよどやばし燁
地下鉄淀屋橋駅から近く、少し裏路地に入った所にある店
おでんが有名な店で、具材ごとに味付けを変えるこだわり様
まずはお通しで、野菜の炊き込み
これだけでも名店と分かる
早く出来るメニューで、蛸の柔らか煮ととり肝の煮付け(ハーフサイズ)
蛸はマスタード風味で食欲をそそる
とり肝は濃厚で旨みたっぷり
そしておでん
・大根 柚子風味で味がよく染みている
・卵 黄身がトロトロで美味い!
・小松菜 ゴマだれ仕立てでシャキシャキ
・玉ねぎ 素材の甘味がふわっと広がる
・湯葉 優しい旨味、甘味がとろける
・牛すじ 濃厚な旨味が爆発
・春菊 ほろ苦シャキシャキ美味い
・海老もち ふわふわ海老風味が濃厚
・トマトとモッツァレラ天
トマトとチーズ風味の揚げ餅で、濃厚な旨味がふわり
ダシも飲み干せるほど美味い!
日本酒はワイングラスで出てきて実にオシャレ
シメのカレーにはおでんダシを使ってるのかな?
複雑な旨味が溶け込んでいて美味い!
最後にほうじ茶も出てきてほっこり
