土曜日の早い時間は特に予約が取りにくい。そういう訳で一年半ぶり。

小肌は完成系。仕事の美しさに見惚れる。
三日寝かした真鯛(愛媛)のねっとりとした甘みは甘海老に近い。他のお客さんもここまで甘みが出るのかと口を揃えていた。
あと、今回初めて頂いた金目鯛。
軽く炙った背中側の部分。
身の力強さを感じた。腹側とはまた違う。
小肌、金目鯛に関しては非のつけどころがないかも。
穴子は個人的になんばの方がトロトロで好み。
人気になり過ぎて、予約が取れなくなっているのが、唯一の難点かな。
次回の予約を試みるも八月までほとんど満席。諦めた。
相変わらず、杉田さんの気遣いができる方。
当日、常連さんのような方が二人で一升近く飲んでいた。
当然、声のボリュームも上がる。
店内を我が家のように。
節度は最低限守って欲しいところ。
ただ自分達がお店を出る際、申し訳なさそうに杉田さんがアイコンタクト。
もうそれだけで十分。
また、行かせてもらいます。
11/01
都寿司、江戸前で最も勢いがあるであろうお店。
場所は馬喰横山。
店内に入ると、ご主人の杉田さんが迎えてくれる。
お店の雰囲気は、銀座の高級寿司屋のような空気感はなく、むしろアットホームな印象すら感じる。
これは杉田さんという人間が出す親しみやすさが良い意味でお店の中に染み付いているからではないか。
握りのおまかせとつまみと握りのおまかせの2種類。
今回はつまみと握りのおまかせをお願いした。
<つまみ>

・えぼ鯛
かんぬきは身の弾力が好み、僕はやはり細魚や鱚には目がない。
鮟肝は味付けのみでなく、肝自体は小さいけれど、主張がしっかりとあり、濃厚さも感じる。
えぼ鯛は沼津産。えぼ鯛は小さなことから結構食べ慣れている味。
<追加つまみ>
・しめ鯖の大葉、生姜葱巻
〆具合も抜群、大葉と生姜の風味とも相性良し。
つまみの印象は、良いものもあれば、普通なものもあるというのが正直な感想。
単純計算で追加以外のものが3000円ということになるかと思う。
つまみに関しては、今後も定期的に通って、季節毎のものを試してみたいと思った。

握りに関しては、今まで食べてきた江戸前の中では、ネタとシャリのバランス、握りの美しさに置いては自分の中でかなりの上位。
シャリの空気感がすごくあって、皿に握りを杉田さんが置くと、じんわりシャリが沈んでいく。
出されてすぐに口に運ぶと、口の中で自然とシャリがほぐれる。
繰り返しになるけれど、握りの美しさは本当に芸術作品のような孤高な印象さえ、感じた。
それは一番初めに出された小肌から見入ってしまうほどだった。
バランスが非常に良い小肌、藁で燻した鰆は追加したくなるぐらいの一貫。
光りものも旨いし、鰤の漬けも初めて頂いたけれど、脂の甘みとほんのり上品に軽く漬けたバランスが良かった。
車海老は山葵の代わりに、海老の味噌を。大分産らしい。
握りはこの値段からすると、とても満足出来る内容。
もちろん全てのネタが皆さんおっしゃる通り、最上級という訳ではないのだろうけど、杉田さんの丁寧な仕事がネタを何倍にも素晴らしいものにしていると思う。
お店は2回転が基本だと思う。
自分達は当日、2回転目に入店した。
席に着いた際、若い男性が二名カウンターにいた。二人とも寿司職人の方でどうやら杉田さんとも親交があるようだった。
一人の男性は恐らく見るからにまだ二十歳前。もう一人の先輩の男性が食べに連れてきていたという感じだった。
その若い方の男性に杉田さんが質問した。
「〜君はなんで寿司職人になろうと思ったの?」
その男性は、「カッコいいからです。」と答えた。
その言葉を聞いて、杉田さんはにこっと微笑まれた。
杉田さんの未来の職人に対しての眼差しや一つ一つ投げかける言葉、そして、その男性の素直な眼差し、そして言葉。
このやりとりを横で聞いているだけで、もう杉田さん、そしてこのお店の良さを感じずにはいられなかった。
杉田さんは昔、将太の寿司にエキストラで寿司職人として出演していたこともあるという秘話も話してくれた。
つまみ、握りはもちろん人というキーワードでも心を満たしてくれるお店だった。
☆に関しては、次回訪問での驚きも期待して4.5。
これからも、長く付き合っていきたいお店。
