予約困難でメディアにも多く紹介されているこちらのお店。
友人が、連れて行ってくれました。
肉職人歴60年越の大将がお肉をさばき、ミシュラン江戸前鮨店出身の息子さんが肉に「しごと」を施し、寿司屋の様な旨味を引き出すタレ不使用の焼肉です。
タレをつけないから、純粋にお肉の旨味が味わえます。

肉の前菜のユッケ、めちゃうま!
次にでてきた、ツラミ。こんなに美味しい肉初めてかも
こぶ締め、熟成感たっぷりで旨味すごかった。
西京味噌漬けの肉も初めて食べたけど、「え!こんなに美味しくなるの!」って感じ
肉に関してはどれもそのままではなく、ひと仕事されていて、旨味のバリエーションも違い、心から大満足。
そして一番美味しかったのは肉寿司!!
さすが、江戸前鮨店出身だけあって、シャリと肉との一体感、口に入れたときのシャリのほどける感じ。最高でした!!!
ホルモンはハチノスで、研きまくった白ハチノス、初めて食べました。普通のハチノスとの違いがよく分かりました。白ハチノスはクセがまったくなく柔らかかったです。
バーガーも絶品!
そして、〆の冷麺は出汁を凍らせてからかき氷器で削り、麺の上に乗せてくれます。
極冷えの冷麺で麺がコシがあって最高でした。
こんなに美味しかった肉の数々、貴重な経験をさせてくれた、友人に感謝です。
