この日は定番から希少部位まで幅広く注文。
まず「ユッケ」。
細かすぎないカットで、卵黄を絡めると肉の甘みがはっきり立つ。
下味は控えめで、肉そのものの旨さを楽しめるタイプ。
「生キャベツ」は口直しとしてちょうどよく、後半まで重宝する。
塩焼でいただいた「アゴ肉」は、他店ではあまり見かけない部位。
歯応えがありつつ、噛むほどに旨味がにじむ。
「ツラミ」は繊維感がありながらも硬さはなく、塩だけで十分成立する味わい。
「塩タン」は薄切りで火入れしやすく、香ばしさが前に出る仕上がり。
「骨付カルビ」は脂の甘さが強く、焼き上がりの香りが食欲を煽る。
「上ハラミ」は身がやわらかく、肉汁が多い。
「シンゾウ」「上ミノ」はどちらもプリッとした弾力が心地よく、ホルモンの質の良さを実感。
締めに「ナッチピビンパ」と「ピビン冷麺」。
特にピビン冷麺は、細めの麺でコシがあり、タレとの絡みが良い。
酸味と辛味のバランスもよく、焼肉の後でも重たさを感じない。
肉、ホルモン、〆まで安定感があり、ランチでも満足度の高い一軒。
