感動をずっとずっとくれるお店だった。
スタートからフィニッシュまで何もかも。
前半戦はおつまみ・握り。
出してくれたお料理たちはまるで表現していく味わいを自己紹介するかのようで。
感動する美味しさを作り出すたけうちさんの無駄が無い動きと所作だけが凛とした空間に音が響く。
どれも本当に物凄く美味しかった中で特に握りに痺れた。赤ムツ(シャリ部分はヤリイカ糸造り)・鯖・カマスの良さの引き出し方が凄まじかった。

ここからいよいよ後半戦の天ぷら。
天ぷらへ取り掛かる前に。
生きたハゼをその場で包丁を入れて手際良(過ぎ)く仕込むたけうちさん。息をするのも忘れるくらい綺麗な包丁捌き。
ずっと見てられる。見ていたかった。
気づけば衣を作る作業へ移行。
鍋に油を注いで天ぷらがスタート。
本当に本当に凄かった。めちゃくちゃ凄い。
こんなに食材と衣が活き活きしてる天ぷら初めてだ。
纏わせる衣はまるでパウダースノーが降ったような軽やかさな衣なのにカリカリで食感が気持ち良い。
見た目で伝わる、揚がった食材たちのきらめき。
食べたらトキメキが止まらなかった。きらきらがすごい。
水分の閉じ込め方が絶妙で、揚げ物の奥深さを改めて教えてもらった気がする。天ぷらは蒸し物って言うけどね。
天ぷらも全部本当に物凄く美味しかった中で特に痺れたのは甘鯛。火入れの仕方も食べさせ方も感動的。

あっという間の時間だった。
たけうちさんから受けたこの感動をまた味わいに福岡に行く事を強く決意。お邪魔出来て本当によかったなあ。
こういう出会いが楽しくて食べ歩きと旅行はやめられない。
