■注文内容
釜あげうどん(小) 税込500円
■感想
久々に釜あげうどんの名店へ訪問
朝9時の開店すぐに行ったからか、
行列は外まで伸びておらず店内待ちのみ
左に沿って進むとある注文口で注文・清算
4年ちょい前に来た時1杯300円だったけど今は500円
元々安すぎたとも言えるけど結構上がったなと
番号札を貰ったら容器を2つ取って1つにお茶を汲む
席で待ってると徳利に入ったダシが置かれます
でもまだダシは注いじゃダメです。冷めるので
割と早めに釜あげうどん到着
徳利の首に掛かってる電線を持って傾け、ダシを注ぐ
(湯煎してあるので徳利を直接持つと激熱です)
まずは薬味を入れずにそのまま飲むと、
先に来るのは強烈なイリコの風味
人によっては魚臭いと感じる程の強さ
でもこれが何故かクセになるのですよ
釜から揚げて水で締めない麺はふんわり食感
でも頼りない程の柔らかさでもなく絶妙な感じ
ダシにつけてすぐ啜らず、10数秒待ってダシを浸みこませるほうが旨いと個人的に思います
結局最後まで薬味は使わず麺は完食
最後は丼の茹で汁をダシに注ぎ、
ネギと生姜を加えて蕎麦湯風にして締め
やっぱりこのダシはここでしか味わえない
ちなみに店名の「in」はテレビ番組「なんでも鑑定団」の「出張鑑定団in〇〇」から付けたらしい
