本日のランチは「八重洲鰻はし本」さんを訪問。こちらは1947年創業の老舗店。鰻重は「い」、「ろ」、「は」と3種類ある中、大きめ1匹の量となる「ろ」、そして「肝吸」を注文する。
暫くして綺麗なお重が配膳される。蓋をオープンすると、見るからに美味しいそうな鰻。本日の鰻は鹿児島県産とのこと。肉厚な鰻を一口。あぁ〜、これは口福しかない。ふっくらでフワフワな焼き具合。
圧巻の火入れがなされ、口の中で溶けていく鰻とお米は最高の組み合わせ。お米は艶やかで少し硬めの炊き上がり。米粒が相変わらず立っている。秘伝のタレはキレがあり、老舗の貫禄を存分に味わえる。
肝吸と香の物が脇をしっかりと固める絶品の鰻重。カウンター席だった為、調理場でのライブ感、大将をはじめ調理人の真剣な眼差しを拝見出来た。はやり八重洲の鰻といえばこちらの「はし本」さん。再訪がとても楽しみである。
