今年もこの「名古屋の至宝」とも言えるサロンレストランに伺う機会に恵まれました。ありがとうございます。
とにかく美味を追求するためには手段は選ばないのが須本流。食材の奥に隠れた究極のひと味を引き出すためにありとあらゆる技法が一皿一皿に投入されます。
またすべての料理も見た目にも美しく、訪れたゲスト全員を漏れなく華やいだ気分にさせてくれます。
それぞれの料理について、須本シェフから殊細かな説明があるのですが、ICレコーダーでも使わない限りそのすべてを覚えることは不可能です。ただ、どの料理にもものすごい手間がかかって、時に破天荒とも言える調理法が駆使されていることがわかればそれで良いのかもしれません。
この日は素性も出身も全く異なる10人のFoodie & 料理人が集う会でしたが、皆さん和気あいあいと須本料理に舌鼓を打っておられました。素晴らしい会を開催くださいました名古屋の大御所に感謝でございます。
また来られるかなあ。。。
