約1年半ぶりの三芳さんは初のおひとりさまで。
寂しそうにしている僕を伊藤さんが優しく相手してくれました。
遅い時間にしか入れず、しかもこの前にも軽く食べてきたため通常コースではなく、軽めに出してもらう予定でしたが、他のお客さんに出している料理を見て、急遽通常コースに変更(笑)
あの花山椒を使ったしゃぶしゃぶを目の前で作られてしまっては食べないで帰るわけにはいかないです。
普段は三芳さんで使われるような超高級牛肉は食べない自分ですが、ここの牛肉を食べるとやはりその香り、旨み、食感そしてその食後感に普段食べている牛肉との違いを感じずにはいられません。
また素材の持ってる力を引き出す技術も流石の一言。花山椒もそうですが、トリュフやこのわた、時期によっては松茸など強烈な個性を放つ食材を牛肉と合わせて、牛肉の持つポテンシャルを嫌みになるギリギリ手前の料理に仕立ててくれます。
自分を含め大半の人が、メインのステーキ(通常コースの料金は最後のステーキのお肉を何するかで決まります)を前にしてお腹いっぱいになるのですが、最後のステーキだけはシンプルに焼いたものだけを出してお肉そのものの良さを味わわせるところに「にくの匠」の矜持がある気がします。
昨今の高級牛肉の価格高騰に合わせて、コースのお値段もだいぶ上がってしまいましたが、やはり牛肉好きであれば一度は必ず訪れるべきお店だと思います。
