素敵な日本家屋の一軒家 で
瀬戸伝来、陶工さん達へ振る舞われた「五目めし」(通称ゴモ)と
素朴な田舎料理を出してくれる料理屋さん。
「お昼のランチ」2100円 のコースをお願いしました。
(山ふぐ、季節の小鉢、利休豆腐、精進せんべい、空也蒸し、
鮎の榾火(ほたび)焼き、五目めし、吸い物、香の物、デザート)
「田舎料理」と謳いながら、けしてイナカ侍ではない。
確かに、ほぼ精進料理でシンプル・素朴とも思える品々だけど
一皿一皿は手間も暇をかけ
見目や味、食感さえも洗練されているという手の込んだお料理なのです。
かなり複雑かと感じる仕度を
何事もなかったかのように「平素のモノ」として出して見せるあたり、日本の粋を感じます。
思うに・・・
どこに出ても恥ずかしくない技量を持ちながら「いえいえ、そんな」と爪を隠す日本人の粋。
最後は瀬戸伝統の五目めし。
陶工さん達が寝ずの釜番をする際、手っ取り早くできる食事だったのだそう。
その色に似合わず良い塩梅で柔らかな風味を持つゴモ。
ああ、そうか。ここは日本。
古さだけが良いことは絶対にないけれど
良き古さを大切にする日本魂を共有できる、そんな四季乃舎さんです。
