神戸を後にして翌日は阪急を乗り継いで昼前に上洛。崇敬会の会員のひとりとして先ずは八坂神社へ日々の御礼と神恩感謝の参拝を済ませ正午前には久しぶりに寄せていただく日本料理『とくを』さんへ昼餉をいただくべく足を進めました。暖簾をくぐると女将さんの満面の笑みで出迎えていただき用意されていた徳尾店主の真正面のカウンター席へ。先ずはハートランドの生ビールのグラスで渇いた喉を潤し最もリーズナブルな昼餉のコースのスタートです。『鱧(ハモ)』出汁のスープでお腹を温め料理は黒豆湯葉(クロマメユバ)の『生海胆(ナマウニ)』のせ、『河豚(フグ)』の煮凝り、椎茸(シイタケ)と菠薐草(ホウレンソウ)の御浸しの先付三品からスタート。向付には背カミの『鮪(マグロ)』の赤身に『鮃(ヒラメ)』に同『縁側(エンガワ)』添えに『鱧(ハモ)』の落としの三種盛です。あしらいには浜防風(ハマボウフウ)と紅蓼(ベニタテ)で割醤油(ワリジョウユ)と梅肉(バイニク)を使い分けいただきました。白眉は今年初めて口にした『鱧(ハモ)』の落とし。山葵(ワサビ)とともに割醤油(ワリジョウユ)で味わうも良し梅肉(バイニク)と山葵(ワサビ)で味わうも良しでした。鮃(ヒラメ)の身は神経〆にされたものなのでしょう。身が活かっており弾力が楽しめ縁側(エンガワ)からは脂の旨味が溢れ鮪(マグロ)は紅蓼(ベニタテ)と山葵(ワサビ)とともに味わいました。蒸物には『鴨(カモ)』のミンチをたっぷり抱いた蓮根饅頭(レンコンマンジュウ)の銀餡(ギンアン)かけです。蓋に添えられた山葵(ワサビ)を溶き溶かし味わいます。刻み木耳(キザミキクラゲ)のコリコリとした食感が佳きアクセントです。そして油物には『原木椎茸(ゲンボクシイタケ)』と『ズッキーニ』と『鱧(ハモ)』のフライを岩塩(ガンエン)とソースを使い分け味わいました。箸休めの『唐墨大根(カラスミダイコン)を合間に挿み焼物の『銀鱈(ギンタラ)』の味噌漬と『蓬麩(ヨモギフ)』の田楽(デンガク)、酢物には鰻(ウナギ)と胡瓜(キュウリ)の『鰻冊(ウザク)』、炊合せに白子筍(シラコタケノコ)と若芽(ワカメ)の若竹煮(ワカタケニ)、そして〆の食事には名物のカリカリの揚げ『ちりめんぢゃこ』に刻んだ大葉(オオバ)を載せた揚げぢゃこごはんと香の物と滑子茸(ナメコ)の赤だしの留め椀。水菓子にマンゴーソースで味わうパンナコッタ、そして焙じ茶(ホウジチャ)にて昼餉のコースはひと通りとなりました。食材料や光熱費に人件費とあらゆるものが右肩上がりで高止まりしている中、原価率をギリギリまで上げながらも頑張られている徳尾店主。以前と全く変わらぬ物腰の柔らかさと語り口の柔らかさに懐の広さと余裕さえ感じられます。祇園から僅か5、6分の下木屋町でアンダー10,000yenの値段設定で奇を衒わぬ素材の持ち味を活かした滋味優先の料理を供される『とくを』さん。京都の割烹ははじめてというビギナーの方から上の価格帯のコースでは、かなり食べ込んでおられる食通の御仁まで満足させてくれる店であると思います。徳尾店主との御付き合いもかれこれ十六、七年余り、「あの時あのマンションを買われていたら良かったですね」と往時『とくを』さんから徒歩4、5分のモデルルームに通い迷いに迷い最終的に断念をした頃の話をされたりと時の過ぎ去る早さに顔を見合わせお互いに相応の歳を重ねましたね。と笑いながら昔話に花を咲かせ楽しい時間を過ごさせていただきました。
