2022年1月12日にオープンされた『 鮨 須藤 』さん。
江戸時代から伝承されている、江戸前鮨に拘りを持ち、
『〆る・煮る・漬る』という鮨職人の技術を受け継ぐ、
佐野では珍しい一軒です。
店舗は、テナントが並ぶマンションの一角に位置。
ガラス張りの扉を開けると、白い漆喰の壁が立ちはだかり、
その壁を抜けると、
白を基調としたシンプルな内装に、欅のカウンターが煇ます。
ご提供されるメニューは、昼と夜のコースがあり、
どちらも、本格的な江戸前鮨をご提供。
リーズナブルな価格帯で、美味しいお鮨を堪能できます。

夜のコースには、前菜が付き、
佐野で採れた食材を使った四季折々の味が楽しめるます。
店主の須藤さんは、東京白金にある鮨店で鮨職人の技術を学び、
江戸前鮨職人ならではの、高い技術をより深く学びたいと、
ミシュランでも紹介された、川崎市の鮨店で修業をして上積み。
その後、念願だった米国居住を実現すべく、
2017年にラスベガスへと渡り、
ハリウッドスターも通う有名鮨店へ、鮨職人として滞在。
4年間の滞在期間中、
後半の2年間は料理長として、江戸前鮨の技術を通し、
日本文化を発信し続けたそうです。
後に、自分の店を持つなら地元の佐野が良いと、
都内に行かずとも、
佐野で、本格的な江戸前鮨が食べられる店を目指し、
『鮨 須藤』をオープンさせたそうです。
使われている鮮魚は、豊洲を中心に、
日本全国から、その時期の旬な鮮魚を仕入れています。
鮮魚を日本から空輸していたラスベガスでの経験を活かし、
海なし県の栃木県佐野市でありながも、それを実現!
食材には、地場産の佐野で採れた食材を積極的に使用。
四季折々の味が楽しめる前菜も、魅力的です(夜のコース)
そんな偉業な経緯を持つ『鮨 須藤』さんですが、
高級感漂う雰囲気とは裏腹に、敷居の高さは、緩め!
小さなお子様連れの方や、ご年配の方にも寛いで頂きたいと、
個室の座敷席を設けたのも、拘りのひとつ。
ハレの日のお祝いや、お子様を連れた会食など、
さまざまな用途のシチュエーションで利用できます。
そして『鮨 須藤』さんと言えば、やはり「赤酢」!
須藤さんのシャリには、数種類の赤酢をブレンドしており、
角のない、円やかな味わいで、
ネタのもつ美味しさを最大限に引き出す、赤シャリ仕様♪
酒粕を醸造させて造られる赤酢は、旨味成分が豊富で、
より一層の旨みを、演出してくれます(*´︶`*)
佐野にいながら、本格的な江戸前鮨が楽しめる『鮨 須藤』
お鮨の味もさる事ながら、
シャリの温度や量、バランス、保温なども、
抜かりなく、しっかりと管理されており、さすが職人技!
わらいずみ!見逃しませんでしたよ( ̄∇+ ̄)
お客様の食べるペースにあわせて、
一貫一貫、心を込めて握られる、粋な心遣いや、
女将さんの優しい、おもてなしの心などが垣間見れ、
とても優雅な時間を過ごさせて頂きました♪
次回は、須藤さんがこの道を志すきっかけとなった一貫、
『唐子付け』を頂いてみたいです!
