お店からDMが届きましたので、
ランチに伺いました・・・ヾ(@⌒ー⌒@)ノ
2ヶ月毎に、マスターが「コース料理」を考えてDM発行しているとの事です。
今回の目的は、「カウンター限定」
『春の旬の味覚と極上にぎりコース』(\5,980)です!
前以て”予約”の電話をして、「お酒持ち込み」の確認も・・・(#^.^#)
※、持込み料は別途掛かります。
今回持ち込みたかったお酒は、
○ 「村祐」【常盤】(純米大吟醸)新潟
大変人気で入手が難しい「日本酒」です。
「芳醇旨口」系ですね!
御猪口を借りて、早速スタートです・・・♪( ´θ`)ノ
● 筍土佐煮

脂がのっていて、大変美味しい「タイ」です!
旨みが凝縮しています!

昆布〆の予定でしたが、新鮮なので「そのまま」・・・
シコシコ感が良いですね!

やさしい味です。なんかホッとします。

産卵期で脂が乗った「タイ」を「桜ダイ」と言うみたいです。
この「タイ」は美味しいです!

脂の旨みは最高ですね!

南魚沼でも「ふきのとう」が出始めているらしいです。

いつもは、北海道産スペシャル箱の「ばふんウニ」ですが、
今回は「むらさきウニ」です。
「ばふんウニ」の方が甘味が強いと思っていましたが、
「むらさきウニ」も結構”濃厚”な甘味を感じます!
でも”見た目”は、「木箱」の「スペシャル箱」の方が・・・

「日本酒」のおつまみに最適です!

・・・佐渡の水タコをプルプルの食感と絶妙の柔らかさに仕上がっています!

● 「かきのもと浸し」・・・体に優しい味わい

● 「アオリイカ(握り)」・・・イカの王様、甘いです
● 「トロ(握り)」・・・濃厚な脂の旨みが押し寄せる

DMで、旬のコースの案内を貰っていたのですが、コース名が判らなくて・・・
「以前もカウンターで食べた様なコースを・・・。」・・・??? と注文・・・( ^ ^ )/
判ったかな???
翌日ちょうど12時に到着・・・( ^ ^ )/
今回3回目ですが、道もお店も少し分かりづらい・・・(@_@) おっ!あった!あった!
お店に入ると、元気の良いマスターが、
「○○様いらっしゃいませ!」
6席のカウンターの中央に着席・・・( ^ ^ )/
「新潟も暑いですが、群馬はどうですか?」・・・とマスター
TVのニュース・新聞等では、群馬の「館林市」「伊勢崎市」が
一番熱いと、取り上げられているが・・・
私の感覚だと、前橋より南魚沼市の方が、「暑い」・・・(ー_ー)!!
なので・・・「前橋(群馬)の方が、こちらより涼しいですよ。」と・・・(@_@)
もう、9月中旬なのに・・・異常気象ですね!
取り敢えず、運転は女房にお願いするので・・・

こちらのマスターは、非常に研究(勉強)熱心で、創造性が豊かです。
『鮨 おばな』等の美味しいお店にも出向き、勉強をされている様です。

ビールが終わり、陶器のサーバーで熟成されている「いも焼酎」へ・・・ロックで・・・(^_^)/
4. まいたけ土瓶蒸し・・・・・季節の定番
5. マグロヅケ(握り)・・・・・・極上のインドマグロの赤身をヅケにして旨みを引き出している
6. トロ(握り)・・・・・・濃厚な脂の旨み
7. ノドグロの塩焼き・・・・・・ジューシーな脂の旨み
8. こはだ(握り)・・・・・・にぎりの王道、すだちでさっぱりと
9. アジににんにくスライスとごま油・・・・・・味と食感はまるでレバー刺し
10. カツオ(握り)・・・・・・魚沼コシヒカリの藁でいぶした、すばらしい香り
11. いちじく風呂吹き・・・・・・いちじくを蒸してごまクリームで
12. ウニ(軍艦)『ばふんウニ』・・・・・・濃厚であま~い
13. ウニ(軍艦)『むらさきウニ』・・・・・・バイ貝が無かったので・・・

やはり、注文がうまく伝わっていなかったか・・・?
