明治五年創業、140年程の歴史をもつ合鴨料理専門店にお招きいただきました。
メニューはコースのみ(〆のご飯を合鴨焼き飯に+料金で変更可能)。
まず前菜五品で気分を上げて、二番出汁のシンプルな吸い物で胃を温め、ササミの粒マスタードソースで準備完了。
そしてメインは合鴨のすき焼き(鉄板焼き)。
用意された部位は胸肉、もも、つくね、レバー、砂肝、皮。野菜は、白ネギ、ピーマン、椎茸、春菊。
まず皮を鍋にのせ油を出します。その油だけで追加の油は用いません。
テーブルについた仲居さんが肉と野菜をそれぞれ絶妙の焼き加減で焼き、丁寧に1つ1つ提供してくれます。
タレは、大根おろしと醤油のみ。好みで七味や粉山椒をつけます。
真鴨とは違いクセはなくシンプルに味わえます。
〆は焼き飯。すき焼きの終わった後の脂の旨味が残った鉄鍋に細かくした皮、そしてご飯を投入、味付けは醤油少々のみ。
最後に胸肉の端部を細かく切ったものを投入して更に焼いて出来上がり。
鴨の脂の美味さを味わいながら〆ることができました。
デザートは黒豆プリン。これもサッパリとして美味かった~
ジビエとは違う優しい鴨を味わえました。ありがとうございました。
