昨年の10月以来、2回目の訪問でした。
今回もレビュワーさまからのお誘い誠にありがとうございました(^^)
さて、啐琢一十の平野さんといえば北海道各地の昆布と鰹節や他の魚介節を広島の軟水で巧みに操り変態的な料理を生み出す和のヘンタイ職人さん。
前回、この出汁と熟成された魚や肉の虜になり今回も楽しみにオジャマしました♪
みなさんがお揃いになり思い思いのお酒でカンパーイ♪
最初の料理は熊本でも一番細いという南関手延べソーメンでしたが広島県竹原の軟水と使った羅臼昆布の出汁で愛媛産の本ミル貝にすりおろし山芋を乗せたものでのっけから出汁の旨さに唸らさせられます(^^)
長崎の700gサイズの釣りものののどぐろの炭火焼きも脂がのってたまらなくうまい!
下に敷かれたキャベツのバター炒めも良い仕事してました♪
続いて5時間煮込んだ山口の周防大島産の黒鮑を肝と鶏卵を合わせたソースでいただきますがこれには日本酒が必須です♪
続いて愛媛の八幡浜産の白甘鯛と鹿児島産の緑竹の竹の子にオクラを入れたお椀ですが蔵囲い6年の利尻昆布に血合いを抜いた鮪節を合わせた出汁が深みがあってたまらない。
ここまでのお酒はプレモルに神雷(薄搾り生酒)に華鳩(純米生酒)ですっきり系で料理にめちゃ合ってて進みすぎてアブナイ!!
ここからはしばらく刺身タイムで駿河湾産の4日寝かせの白甘鯛、福山産の虎魚、広島の大野産の真子鰈、長崎産の700gサイズのノドグロ、駿河湾産の13日寝かせの金目鯛。
寝かせることによりタンパク質がアミノ酸に変わりうま味が凝縮されてるんですが33年間継ぎ足しているポン酢と合わせるとうま味がさらに引き出されます(≧▽≦)
お酒も鳳凰美田(みぞれ酒)を追加です♪
そして翌日も息子さんの店で味わう予定の榊山牛の内腿の生ハム。
抜群の塩梅でこれまたお酒ドロボー(^^)
超群(純米生原酒)お代わりね~♪
駿河湾産の黒睦の炭火炙りも脂ノリノリで甘長唐辛子も良い食感♪
そして榊山牛のサーロインのしゃぶですが前回もいただいた真昆布&いりこに鰹節とあご節を合わせた出汁でいただきますがこれまたうますぎてノックアウト寸前!
昆布から出る遊離アミノ酸であるグルタミン酸とアスパラギン酸が節系から出るイノシン酸と合わさってうま味が最大限に引き出されるんですよね~(≧▽≦)
〆的に岩もずく、胡瓜、茗荷のせごはんに香の物(赤・黄パプリカ、茄子と茎いも)。
山口柳井産の赤雲丹の赤酢シャリマイクロ丼で締めくくって今回も大満足(≧▽≦)
