丸の内ブリックスクエアの地下にある【豚専門 清水】で、アグー豚鍋と小皿コース(¥6,900)をいただきました。
落ち着いた和モダンな雰囲気の店内で、ゆったりと上質な豚料理を堪能できます。
最初のししとうの浅漬けからでスタート。
続いて登場した「タン刺し甘醤油添え」は、程よい弾力と甘めのタレが相性抜群で印象的。炭火で香ばしく焼かれた「特選豚足」は外カリッ、中はとろっと柔らかく、豚の旨みが凝縮されていました。
メインの「名物 アグー豚せり鍋」は初めて食べましたが、想像以上にあっさり。脂の甘みがしっかりありつつ、出汁が効いていて箸が止まらない美味しさ。せりの爽やかさが良いアクセントになっています。〆はお店名物の「マッカラン茶碗蒸し雑炊」。旨みが溶け出したスープと卵のとろみが合わさり、これだけでも食べに行きたい一品。
デザートの「はちみつたっぷり塩アイス」まで大満足。
豚の魅力を存分に味わえる、丸の内らしい上品な豚料理専門店でした。
