店名の「CARMEN」は、彼の師であるスペインの至宝、カルメ・ルスカルイェーダ氏への敬意が込められています。

バルという言葉から連想するポーションよりもしっかりとした量で提供されるため、注文の際は注意が必要です(嬉しい誤算でした)。
・48ヶ月熟成 イベリコハム ベジョータ (4,900円):深い熟成感と脂の甘み。限定のCAVAとのペアリングは至福。
・烏賊のフライ アンダルシア風 (1,800円):スペイン南部伝統の調理法「ア・ラ・アンダルサ」。薄粉でサクッと揚げる「引き算の美学」が、イカの弾力を引き立てます。レモンを絞れば、最高に気の利いたお酒の相棒に。
・蒸し蛸、バジル、ポテト (3,800円):驚くほど柔らかなタコ。ポテトピューレの質感も高く、食べ応えがあります。
・海老のアロス・カルドソ (3,800円):今回の白眉。海老の旨味が凝縮されたスープ仕立てのライス料理。玄米の食感がアクセントになり、最後の一滴まで濃厚な海のエッセンスを堪能できます。
・JÉRÔME チーズケーキ (980円):言わずと知れた名品。とろける食感がたまりません。

スタイリッシュな内装と落ち着いた照明で、大人の語らいにぴったりの空間。
これだけ上質な食材を楽しんで二人で2万円を切るコストパフォーマンスは、銀座や六本木界隈のバルと比較しても非常に優れています。
コースでじっくり向き合うなら「Tinc gana」、よりカジュアルに、でも味は妥協したくない時には「CARMEN」が最適。
