ここの4代目の中治さんは
イタリア・ミラノのここを掛け持ち。
そして期間限定で若手(第五世代)に
昼を任せるチャレンジをやっていた。
なかなか予約が取れず、この日になってしまった。
美味しいものが揃う11月やからかえってありがたい。
前置きはさておき始まり。
最初に撮影についてのわかりやすい説明があり、
これはとても大切なことやから

ご存知愛媛の銘酒。
まさにTHE食中酒やね。
KINO(帰農)
三重県多気郡大台町の酒。
と言うことはかつてドライブで行った大台ケ原
近いんやろか?
何とバカラのグラスとともに。

フルーティーなのに出しゃばらない。
そんな上品な酒。
私も肖りたいw
コースは
まずは釜に炊かれたシャリが登場。
何と横にしても全く崩れない!
最初に手渡しで炊き立てのシャリの試食から。
まだ芯の硬さも感じられる。
これが時間を経過するとちょうど良くなる。
そこへ新木場の横井醸造の赤酢を投入。
赤酢のシャリは万能やない(鮪には合う)けど
その辺もしっかり計算されている。
赤身
こちらは塩とともに。
大間産の本鮪。
中トロ
こちらは醤油と。
たたき
何といぶりがっこ入りのユニークな握り。
小肌
1週間以上熟成。
添えられた新生姜のガリとともに。

そう。赤酢は鮪などの赤身魚との相性抜群
やけど青魚や貝類は少し苦手。
そこで「手渡し」形式。
店によっては2種類のシャリを提供することもある。
これはなかなかええアイデア!
この値段でシャリ2種類は利益出えへんし。
手で食べるのが一番やけど
箸で食べても構わへんし、そこはそれぞれ。
そして塩と赤酢以外不使用の潔さ。
安曇野産の山葵は目の前で丁寧に擦ってくれはるし。
この日は古田さんのステージ。
僅か数カ月で堂々としたものや。
若くしてこんな経験値を積めるのもええね。
一流の人から私のようなアホまで
色々な人とのコミュニケーションで
視野が広がるとええな。
長いと嫌われるからこの辺でw
